Canned Pumpkin vs. Pumpkin Pie Filling (Read This First!)
Every recipe below calls for 100% pure pumpkin puree – NOT pumpkin pie filling. They sit side by side on the shelf and the cans look nearly identical, so check the label.
- Pumpkin puree (sometimes labeled “100% pure pumpkin” or “solid pack pumpkin”) is just cooked, mashed pumpkin. No sugar, no spices. It works in sweet AND savory recipes.
- Pumpkin pie filling already has sugar, spices, and sometimes thickeners mixed in. It only works for pie, and it will throw off the sweetness in everything else.
A few quick facts to make these recipes easier:
- A standard can is 15 ounces, which is about 1¾ cups of puree. The big 29-ounce can is just under 3½ cups.
- Store-brand pumpkin is usually $1–2 a can in fall, and it tastes the same as the name brand in baked goods.
- If your puree looks watery, blot it with a paper towel or let it sit in a fine strainer for 10 minutes. Drier puree = better texture in cookies and muffins.
- You can swap in canned butternut squash or sweet potato puree in most of these in a pinch.
Don’t have pumpkin pie spice? Mix 1 tablespoon cinnamon, 1 teaspoon ginger, ½ teaspoon nutmeg, and ¼ teaspoon each of allspice and cloves. That’s enough for a few batches.

How to Use Up a Whole Can of Pumpkin (and Store the Rest)
Most recipes use ½ to 1 cup of puree, and a 15-ounce can holds about 1¾ cups – so plan two recipes per can. Here’s how I stretch it without wasting a spoonful:
- Pair a big recipe with a small one. Make pumpkin bread (a full can) OR pancakes plus a batch of energy bites (½ cup + ½ cup). Muffins plus pumpkin alfredo is another easy combo.
- Stir leftovers into everyday food. A few tablespoons of puree disappear into oatmeal, yogurt, smoothies, mac and cheese, chili, or even your dog’s dinner (plain pumpkin is great for dogs).
- Refrigerate opened pumpkin in a sealed container, not the can. It keeps for about 5–7 days.
- Freeze it in portions. Scoop puree into an ice cube tray (about 2 tablespoons per cube) or freeze in ½-cup portions in freezer bags. It lasts 3+ months and thaws overnight in the fridge. Blot off any extra liquid before using in baked goods.
- Buy on sale. Unopened cans last well past the season, so stock up when they drop to a dollar in October and November. Store brand is just as good.
- Batch-bake and freeze. Muffins, pancakes, waffles, donuts, and cookies all freeze beautifully, so one can of pumpkin can turn into weeks of breakfasts.
Canned Pumpkin FAQ
What can I make with one can of pumpkin?
A single 15-ounce can is enough for one loaf of pumpkin bread, or two smaller recipes like pancakes and a pumpkin pasta sauce. Breakfasts, soups, pasta, cookies, bars, dips, and lattes all work – see the list above for 40 ideas.
Is canned pumpkin the same as pumpkin pie filling?
No. Canned pumpkin (pumpkin puree) is plain cooked pumpkin with nothing added. Pumpkin pie filling has sugar and spices mixed in and only works in pie. Every recipe here uses plain puree.
Is canned pumpkin healthy?
Yes – plain pumpkin puree is low in calories and high in fiber, vitamin A, and potassium, with no added sugar. It’s a budget-friendly way to add vegetables to baked goods, sauces, and smoothies.
How long does canned pumpkin last after opening?
About 5–7 days in a sealed container in the fridge. For longer storage, freeze it in ½-cup portions for up to 3 months.
Can you freeze canned pumpkin?
Absolutely. Freeze it in an ice cube tray or freezer bags, thaw in the fridge overnight, and blot off any extra liquid before baking with it.
Can I use fresh pumpkin instead of canned?
You can, but it takes work. Roast a sugar (pie) pumpkin, scoop, puree, and strain it well – fresh puree is much wetter than canned. For most of these recipes, canned is cheaper, faster, and more consistent.
Does canned pumpkin taste like pumpkin?
On its own it’s mild and slightly earthy, like squash. The “pumpkin” flavor people love comes from the cinnamon, ginger, nutmeg, and cloves in pumpkin pie spice, which is why it works in savory dishes too.
