Air Fryer Libby’s Pumpkin Bread –There is nothing better than a slice of homemade pumpkin bread once the weather starts to get chilly. Today, I used a simple boy of Libby’s Pumpkin Bread Mix and made a delicious breakfast for the entire family.
I love a great slice of pumpkin bread and usually treat myself at Starbucks by getting a slice with my PSL (Pumpkin Spice Latte)
Today, I made this amazing bread. I actually made 3 of them. They were delicious; they made a great breakfast and afternoon snack. And the bread came from a simple kit you can get at Walmart, Amazon, or your local grocery store!
I have been using my air fryer and experiment with different foods. So this is what I came up with.

Libby’s Pumpkin Bread
While I do not usually use box mixes in my cooking, I actually make them, and I usually do not share them. This recipe was so good; I wanted everyone to make it—moist, tender, and absolutely delicious.
The package comes with everything you need to make a great slice of pumpkin bread, including bread mix, pumpkin puree, and the instructions. The box says it will make 2 loaves. I made 3 mini loaves, which are perfect for the air fryer.
Ingredients For Air Fryer Libby’s Pumpkin Bread
- Box of Libby’s Pumpkin Bread Mix
- Vegetable Oil
- Cooking Spray
How To Make Air Fryer Libby’s Pumpkin Bread
Mix well in a large bowl, mix the bread mix, pumpkin puree, eggs, water, and vegetable oil.
Prepare as directed on the package and then pour into 2 (I needed two, the number of pans will depend on the size of your air fryer and pans) pans with non-stick cooking spray. Set in the air fryer oven or basket and set the timer for 30 minutes at 320 degrees F, air fryer setting.
Note: Check the doneness of the quick bread by inserting a toothpick through the middle of the bread; if it comes out clean, it is fully cooked. If not, add another few minutes (the exact time is going to depend on the wattage and type of air fryer you own)
Let cool slightly before slicing.
How to Store Pumpkin Bread
This bread is a great make-ahead breakfast or dessert. After you serve it, cover it with saran wrap, and place it on the counter. It will last about 3 to 4 days.
If you want to keep it a bit longer, it will stay in the refrigerator for about a week.
How to Freeze Pumpkin Bread
This is a great bread to make ahead and freeze. To freeze, let it cool to room temperature, wrap in saran wrap, and then wrap in foil.
Place the bread into the freezer, where it will last for about 2 months. To use from frozen: Place the frozen pumpkin bread into the refrigerator until it’s thawed.

Best Pans For Making Air Fryer Quick Breads:
While you can use a full-sized loaf pan, I often find that the middle does not cook. So, I would recommend that you invest in a mini loaf pan set. These are some of my favorites (affiliate links included)
