This is one of my favorite recipes if you are looking for a great and easy option for a one-serving breakfast or dessert. It is a perfect recipe for an easy coffee cake to go with your morning coffee.
I love that it has the rich flavor of pumpkin, filled with all of the fall spices, ground cloves, nutmeg, and a dash of pumpkin spice. It’s a great treat with my pumpkin spice latte—a true treat for the pumpkin lover in all of us.

Ingredients Needed For Air Fryer Mug Pumpkin Coffee Cake
- Butter
- Granulated Sugar
- Pumpkin Puree
- Pure Vanilla Extract
- All-Purpose Flour
- Baking Powder
- Brown Sugar
- Spices: Ground Nutmeg, Ground Cloves, Pumpkin Spice, and Salt.
How to Make an Air Fryer Mug Pumpkin Coffee Cake

In a small mixing bowl, cream the butter and sugar.

Add the pumpkin puree, pure vanilla extract and mix well.

Add the flour, baking powder, and spices, mix well.

Pour the batter into a greased ramekin. Then in a small bowl, make the streusel topping. In a small bowl, mix the butter, flour, and brown sugar, scoop on top of the coffee cake batter.
Set the ramekin or mug into the air fryer basket for 10-12 minutes at 320 degrees F, air fryer setting. Check halfway since the actual time will depend on how thick your mug is.

- 4 tablespoons pumpkin puree
- 1 teaspoon pure vanilla extract
- 1/2 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt, omit if using salted butter
- 1/4 teaspoon pumpkin pie spice
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
Topping:
- 2 tablespoons butter, unsalted and cold
- 4 tablespoons all-purpose flour
- 2 tablespoons brown sugar
Instructions
- In a small mixing bowl, cream the butter and sugar.
- Add the pumpkin puree, pure vanilla extract, and mix well.
- Add the flour, baking powder, and spices, mix well.
- Pour the batter into a greased ramekin. Then in a small bowl, make the streusel topping. In a small bowl, mix the butter, flour, and brown sugar, scoop on top of the coffee cake batter.
