Ingredients
- 2 boneless skinless chicken breast
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 slices prosciutto
- 2 slices provolone cheese
- 1/2 pound asparagus spears, trimmed
- 1/2 cup panko
- 1/4 cup grated Parmesan cheese
- 1/4 cup flour
- 2 eggs
Instructions
- Start by using a mallet, and flatten the chicken breast, until about 1/8 inch thick. Season the chicken breast with salt and pepper.
- Then place a slice of prosciutto on top of the breast, followed by a slice of provolone cheese, on top of the cheese, place about 3-5 asparagus spears.
- Roll up the breast, I used twine to hold it together.
- In one bowl place the flour, in another bowl whisk the eggs, and in the last bowl combine the panko and grated parmesan cheese.
- Dip the rolled chicken breast into the flour, coating all sides, then dip it in the egg mixture, and finally coat it with the panko/Parmesan cheese.
- As you coat them place them on a greased air fryer tray or in a greased air fryer basket.
- Spray generously with olive oil spray.
- Air fry for 7 minutes, at 370 degrees F, and then flip and spray again, and air fry for another 7 minutes.
- Check the internal temperature, which should be 165 degrees F before removing.
- Plate, serve, and enjoy!
