How to Make Air Fryer Copycat Terra Vegetable Chips
This recipe is incredibly easy! The hardest part will be slicing the vegetables. Your best bet is to use a mandoline, but please be careful — it will be sharp! Below, you’ll find the rest of my step-by-step instructions so that you can follow along at home.

Step 1: Slice the potatoes with your mandoline to about 1/16-inch thick. Place the slices in a bowl of water and allow them to soak for about 30 minutes. Dry them thoroughly with paper towels. Next, slice the beets to the same size. Add everything to a large bowl with the olive oil and salt and mix to evenly coat.

Step 2: Preheat your air fryer to 320 degrees F for 3-5 minutes, then add the vegetable slices in a single layer. Set cook time for 20-30 minutes, flipping the chips every 5 minutes or so. Remove the air fryer veggie chips from the basket when they turn crispy and golden brown. Let them cool slightly before serving and enjoy!

- A mandoline will help you make even slices, giving you the crispiest results. You could also use a sharp knife with a quality cutting board, but it will take much longer — and the slices may not all be the same size!
- Don’t Skip the Soak: You need to soak the sweet and purple potatoes to remove some of the excess starch. Don’t try to rush through this step, and make sure to dry them off completely when they’re done soaking.
- Use Tongs: You want to ensure that the vegetable slices are well coated with olive oil and salt. Tongs will make things easier, and you won’t have to get your hands dirty!
- Cook in Batches: Make sure to arrange the vegetable slices in a single, even layer in the air fryer basket. Avoid overcrowding — air fry in batches if you have to.
- Shake the air fryer basket frequently for the crispiest and crunchiest results.
- Check for Doneness: Start checking on the air fryer veggie chips at around the 20-minute mark. All air fryers cook differently.

Ingredients
- 1 large sweet potato
- 1 large purple potato
- 1 large beet, red
- 1 large beet, golden yellow beet
- 2 to 5 tablespoons olive oil
- 1 to 2 tablespoons salt or sea salt
Instructions
- Start by slicing the potatoes with a mandoline, about 1/16 inch thick. After you slice them, soak them in a bowl of water. Soak for about 30 minutes. Dry them with either a kitchen towel or paper towels.
- Then cut the beets with your mandoline, about 1/16 inch thick. Add both the beets and dried-off sweet potatoes to a large bowl. Add the olive oil and salt. Mix well, coating all of the sliced vegetables.
- Preheat your air fryer to 320 degrees F, air fryer setting, for about 5 minutes. Then add your vegetables so they are a single layer. You’ll probably need to do several batches, depending on what air fryer you own. Flip the vegetables every 5 minutes until they are crisped up. This usually takes about 20 to 30 minutes.
