How To Make Air Fryer Blackberry Lemon Poppy Seed Muffins

Mixing flour, poppy seeds, butter, sugar, eggs, sour cream, milk, lemon juice, and vanilla together in a large bowl to form muffin batter

Step One: In a large mixing bowl, combine the flour, poppy seeds, baking powder, baking soda, and salt. Add the butter, then stir in the sugar, eggs, sour cream, vanilla extract, milk, and lemon juice, mixing thoroughly and scraping down the sides as needed..

Folding fresh blackberries into muffin batter and filling greased or lined muffin cups about three-quarters full

Step Two: Gently fold the fresh blackberries into the batter to avoid breaking them. Prepare your muffin tin by either lining with paper liners or spraying with non-stick cooking spray. Fill each muffin cup about three-quarters full with batter.

Step Three: Place the filled muffin tin in the air fryer basket (or oven). Set the air fryer to 320°F and cook for 12 minutes. Check doneness by inserting a toothpick into the center; it should come out clean. If not, cook for a few additional minutes until fully baked.

Air Fryer Blackberry Lemon Poppy Seed Muffins Recipe Tips

  • Use fresh blackberries: They hold their shape better and provide juicier bursts of flavor.
  • Gently fold berries: Avoid overmixing to prevent the berries from breaking and turning the batter purple.
  • Check your air fryer: Cooking times can vary by model, so monitor the first batch closely.
  • Fill muffin cups properly: About three-quarters full ensures even rising without spilling over.
  • Optional flavor boost: Add extra lemon zest or a light glaze for more tangy sweetness.

  • Refrigerator: Keep muffins in an airtight container for up to 5 days; warm slightly before serving.
