Let me be completely honest with you, and I am a Starbucks Lover. From their coffee to the Baked Goods, I love everything Starbucks, but truly spending $40 a day on breakfast is not in my budget.
And although they are truly worth it, I started making the baked goods in my air fryer with the same great fast and so much more budget-friendly!

Ingredients For Air Fryer Starbucks Copycat Blueberry Muffins

- Eggs
- Granulated Sugar
- Vegetable Oil
- Pure Vanilla Extract
- White Vinegar
- Baking Soda
- Salt
- Sour Cream
- All-Purpose Flour
- Blueberries
- Butter
How To Make Air Fryer Starbucks Copycat Blueberry Muffins

Start by making the streusel topping, mix in a small bowl the flour, melted butter, sugar, and salt. Mix well, set aside.
Cream the sugar and eggs together until the mixture is light and fluffy. I use my Kitchen Aid Mixer and a stand mixer or handheld mixer. Mix in the oil, vanilla, vinegar, baking soda, and salt. Mix in sour cream and flour.
Then remove the mixing bowl from the mixer, and fold in the blueberries with a spoon.

Fill the muffin tins with about 1/4 cup of batter. Generously sprinkle the topping over the muffins.
Set the muffin tin or silicone muffin molds into the air fryer basket and set the time for 10 minutes at 320 degrees F, air fryer setting.
After 10 minutes check the muffins and make sure that they are cooked thoroughly.
Use a toothpick and sticking it in the middle of the muffinThey are fully cooked ifIf it comes out cleed; if the toothpick comes out with batter, add another 2 minutes, then check again. Repeat until they are fully cooked.

Pro Tips:
- Once the batter is combined, stop mixing, it’s the number one problem we make; overmixing leads to dense muffins.
- Checked your muffins periodically during the cooking process since each air fryer is different.
- If you are using an air fryer oven, place the basket on the lowest level.
- Let them cool slightly before serving.
- Either use muffin tins with or without paper liners. Just make sure they are weighted down fully.
How To Store Muffins:
Although you will probably eat these in one sitting, they make for a great snack or treat later on if you have any leftovers.
Let them cool to room temperature, and then place them into an airtight container. They will last at room temperature for about 2 to 3 days.
Freezing Blueberry Muffins:
A great trick for making and freezing breakfast for a later time. These freeze amazingly well.
To freeze, let them cool to room temperature, then individually wrap them in a couple of layers of saran wrap and then a couple of layers of aluminum foil. Then place them into a freezer bag.
When ready to eat one, remove it and place it on the counter or overnight in the refrigerator.
Can I use Frozen Blueberries?
Yes, if you do not have fresh blueberries, go ahead and substitute them for frozen berries. You can use either regular or even Wild Berries!

Muffins:

If it comes out clean, they are fully cooked; if the toothpick comes out with batter, add another 2 minutes, then check again. Repeat until they are fully cooked
- Remove the cooked muffins from the Air Fryer, let them cool.
- Plate, serve, and enjoy!
