I have to admit, I made this recipe because I am so cheap and I think one day I ended up spending $30 on breakfast at Starbucks with my kid’s and myself. And I thought to myself, I can do this at home. That is not to say that you will not find me at Starbucks, I happen to love Starbucks. But, today I picked up some blueberries and made some Air Fryer Starbucks Blueberry Muffins.
Today I am giving you my Copycat Recipe, for Starbucks Blueberry Muffins. Again with everyone who loves Starbucks, this is a great copycat recipe, that you can make at home.
My husband brought my first batch to his work, and they all were eating them all day, which is a great sign for me, and then I got a couple of texts saying they were better than Starbucks, I loved them, and I’m sure you will too.
Here are the Simple Ingredients I used for Air Fryer Starbucks Blueberry Muffins.:
MUFFINS:
- Eggs
- Granulated Sugar
- Vegetable Oil
- Pure Vanilla Extract
- White Vinegar
- Baking Soda
- Salt
- Sur cream
- All-purpose Flour
- Fresh Blueberries
STREUSEL TOPPING:
- All-Purpose Flour
- Butter
- Granulated Sugar
- Salt
The Simple Steps:
- Start by making the streusel topping, mix in a small bowl the flour, melted butter, sugar, and salt. Mix well.
- Set the topping aside.
- Cream the sugar and eggs together, until the mixture is light and fluffy. I use my Kitchen Aid MIxer.
- Mix in the oil, vanilla, vinegar, baking soda, and salt.
- Mix in sour cream and flour.
- Then remove the mixing bowl from the mixer, and fold in the blueberries, with a spoon.
- Fill the muffin tins with about 1/4 cup of batter. Generously sprinkle the topping over the muffins.
- Set the muffin tin or silicone muffin molds into the air fryer basket and set the time for 10 minutes at 320 degrees F.
- After 10 minutes check the muffins and make sure that they are cooked fully. By using a toothpick and sticking it in the middle of the muffin. If it comes out clean, they are fully cooked if the toothpick comes out with batter, add another 2 minutes, then check again. Repeat until they are fully cooked.
- Remove the cooked muffins from the Air Fryer, let cool.
Tips On Making The Perfect Muffin in The Air Fryer–
The secret to making muffins in the air fryer is time and patience. Every air fryer is different, one air fryer will cook your muffins at 12 minutes another will cook them at 14 minutes, another yet at 16 minutes. My tip to you, as someone who has been baking in the air fryer for almost 4 years: After you make your first batch of muffins, EVER make any, write down the time, and keep a log of it, and then you can adapt it to any homemade or box muffin mix.
To be successful at making the batter for muffins, any muffins:
- Combine all of the dry ingredients into a large mixing bowl. In most muffins, this will include flour, baking soda, baking powder, and salt. Mix that all together.
- Then in another bowl, combine all of your wet ingredients These usually include milk, oil, and eggs.
- Then mix the wet and dry ingredients together.
- Be careful not to over mix the batter, as you will increase the level of gluten and the muffins will become tough. Once the ingredients are mixed well, you are done. Do not over mix.
- Fruit should always be added last, as well as nuts.
- Do not overfill your muffin tin, while it might seem that you can fill the whole cavity, you really just want to fill about 3/4 the way.
- I love sparkling sugar on the top of any muffin, it creates a great flavor, without any extra work (just a sprinkle)
- Let them rest, after you take them out of the air fryer let them rest for a few minutes. Otherwise, your muffins will have a tendency to fall apart.

Can this recipe be adapted to regular oven? I have a small air fryer and don’t want to be cooking muffins all day one at a time.

I can only get 4 muffins in my air fryer at a time but they’re worth it. They turn out beautiful every time. Thank you for this recipe
