- Fresh Tomatoes: Choose ripe, firm tomatoes, preferably Roma, Heirloom, Campari, or plum, all of which work well for this recipe. You need fresh, not canned.
- Breadcrumbs: I like panko or Italian seasoned breadcrumbs for this recipe, but you can use your favorite!
- Parmesan Cheese: Gives your roasted tomatoes in air fryer a cheesy, savory, and a bit nutty flavor. I usually like to use grated, but sometimes I’ll add some shredded parm as well, as shown in the images.
- Garlic: I also add a touch of fresh minced garlic to the cheesy topping. It pairs great with all of the other ingredients. If you don’t have any fresh, you can use garlic powder instead.
- Olive Oil: A drizzle of olive oil adds richness and helps the Parmesan breadcrumb mixture stick to the tomatoes as they roast.
- Seasonings: I added kosher salt, black pepper, dried basil, parsley, oregano, and dill to the topping mixture as well. They highlight the natural flavor of the tomatoes and also add a touch of herbiness to the mix.
- Serving: I usually serve air fried tomatoes with fresh herbs, balsamic vinegar, fresh basil, or a drizzle of avocado oil or olive oil on top.
How to Make Air Fryer Parmesan Tomatoes
The combination of juicy tomatoes cooked until golden and lightly crisped with Parmesan cheese is irresistible! Below you’ll find step-by-step instructions on how to make roast tomatoes in air fryer.
Step 1: Make the Parmesan herb topping
Add the breadcrumbs, Parmesan, minced garlic, olive oil, dried herbs, salt, and pepper to a small mixing bowl and combine.
Step 2: Prepare the tomatoes
Wash and dry the tomatoes and slice them in half. Top evenly with the breadcrumb mixture.
Step 3: Air fry
Set the temperature to 330 degrees F and air fry for 6-10 minutes, or until the topping is crispy and the tomatoes are tender. Plate, serve, and enjoy!
Air Fryer Tomatoes with Cheese Variations
- Caprese-Style: Layer a thin slice of fresh mozzarella cheese and a fresh basil leaf on top of each tomato half before coating it with Parmesan. Air fry until the cheese melts and becomes gooey.
- Spicy: Sprinkle red pepper flakes or cayenne pepper over the topping for a spicy kick.
- Balsamic Glaze Drizzle: After the air fryer Parmesan tomatoes are done, drizzle with a balsamic glaze reduction for a sweet and tangy flavor contrast.
- Parmesan and Pesto: Spread a little pesto sauce over each tomato half before coating it with the topping. This adds a burst of basil and nutty flavors to the dish.
- Mediterranean Inspired: Sprinkle chopped Kalamata olives and crumbled feta cheese after you add the topping. Finish with a drizzle of extra virgin olive oil and a squeeze of lemon juice.
- Italian Seasoning Blend: Mix Italian seasoning or a blend of dried herbs like thyme, rosemary, and marjoram with the Parmesan cheese before coating the tomatoes.
- Smoky: Add a touch of smoked paprika or chipotle powder to the seasoning mix for a smoky flavor.
- Buffalo-Style: Toss the tomatoes in buffalo sauce before coating them with the topping for a spicy and tangy twist.
- Bacon and Cheddar: Sprinkle crumbled cooked bacon and shredded cheddar cheese on top before air frying for a rich and savory flavor combination.
Air Fried Tomatoes Pro Tips
- Choose Ripe Tomatoes: Opt for ripe but firm tomatoes. They have the best texture and flavor for this dish.
- Even Halves: Try to halve the tomatoes uniformly so that they cook evenly!
- Ingredients Matter: Because you aren’t using much to make these tomatoes, make sure to choose high-quality Parmesan, olive oil, herbs, and only the freshest tomatoes.
- Add garlic powder sparingly: If you choose garlic powder over fresh minced garlic, be careful not to add too much as it can quickly overpower the dish. Start with a small amount and adjust — dried garlic powder is much stronger than fresh.
- Press Down Slightly: When you add the breadcrumb mixture on top of your tomato halves, press down ever so slightly to help it stick.
- Arrange the tomato halves in a single layer: You don’t want to overcrowd the basket or the tomatoes will steam instead of roast! It’s always better to cook in batches if you can’t fit them all in comfortably.
- Check For Doneness: Keep a close eye on your roasted tomatoes in air fryer as cooking times can vary depending on your model. Take a peek after about 6 minutes — they should be golden brown and slightly crispy when done.
