How to Make Breakfast Sliders on Hawaiian Rolls

Step 1: Cook the sausage and eggs. Preheat the oven to 350°F. Cook the sausage patties until browned and cooked through (160°F inside), then set them on a paper towel. In the same skillet over medium-low heat, scramble the eggs with a pinch of salt and pepper until soft and just set.

Step 2: Slice the rolls and add cheddar. Keep the rolls connected and slice the whole slab in half horizontally with a serrated knife. Lightly grease a 9×13 baking dish, place the bottom half inside, and cover it with the cheddar slices.

Step 3: Layer the fillings. Spread the scrambled eggs evenly over the cheddar. Add the sausage patties, then the pepper jack, and set the top half of the rolls in place.

Step 4: Glaze and bake. Whisk the melted butter and maple syrup together and brush or spoon it over the tops. Cover loosely with foil and bake 15 minutes, then uncover and bake 5 more minutes until the tops are golden and the cheese is melted.

Step 5: Slice and serve. Let the pan rest for 2 minutes, then cut along the roll lines into 12 sliders and serve warm.

Tips for the Best Breakfast Sliders

  • Pull the eggs early. Take them off the heat while they still look a little glossy. They cook more in the oven, and fully set eggs turn rubbery.
  • Cheese goes on the bottom. Cheddar directly on the bottom rolls acts as a moisture barrier between the bread and the eggs. For extra insurance, toast the bottom half at 350°F for 3 to 4 minutes before layering.
  • Blot the sausage. Excess grease is the main cause of soggy bottoms, so drain the patties on paper towels.
  • Bake covered, then uncovered. Foil for the first 15 minutes heats the center without burning the maple glaze; the last 5 minutes uncovered crisps the tops.
  • Slice with a serrated knife. Cutting the connected rolls as one slab keeps the layers even and makes assembly fast.
