Start by adding your cheese puffs to either a food processor or into a Ziploc bag, and crush until the cheese puffs.

Transfer the crumbs to a large bowl. Add the eggs in another and whisk the egg with a fork until frothy. In the third bowl, add the flour.

Dip your cheese stick into flour, the egg, and finally into the cheese puff crumbs. As you coat them, place them on a parchment-lined baking sheet, and freeze until frozen solid. 

Then place them into the air fryer at 370 degrees F, air fryer setting, for 4 to 7 minutes, until they are fully cooked.

Pro Tips:

Cheese-Sticks: One of the biggest problems that people have when making mozzarella sticks is that low-fat does not work. Since low-fat mozzarella sticks contain less fat, you will end up with a gummy texture. So, for best results use full-fat mozzarella string cheese.

Freeze: Make sure that you fully freeze these, you want them completely solid, before air frying them. Otherwise, they will fall apart.

Parchment Paper: I have found over the years that using parchment paper, really helps the coating stay on the cheese sticks. You can also use an air fryer reusable silicone liner.

Crowding: Working in batches is the way to go if you want these cheese sticks crispy on both sides. I found that they’re easier to flip them as well.

Flipping: Depending on where your heating element is located, you may need to flip these halfway during the cooking process, so both sides cook up to perfection.
