What Oil To Use?
While I usually opt for olive oil, you can use any high-heat oil that you want. Some great options are avocado oil, sesame oil, or even coconut oil.
The key is to make sure that the tomatoes are coated with oil before roasting them. This will bring out the roasted flavor.
Today, I used balsamic vinegar for a great Italian twist.
What Seasoning To Use?

How To Store Tomatoes
Covered and refrigerated these tomatoes will last about 3 to 4 days in the refrigerator. I would highly recommend, however, that you eat them on the same day that you roast them up.
