Place seasonings in a mixing bowl.

Step One: Line a large cooking sheet with parchment paper. In a medium bowl, combine breadcrumbs, parmesan, and spices. Adjust seasonings to taste. Set aside.

Step Two: Slice the Zucchini into ¼-inch thick slices.

Create the dipping bowls.

Step Three: Dip each Zucchini slice first in flour to thoroughly coat, then shake off the excess flour. Next, dip the floured slice in the beaten egg, shaking off the excess. Finally, dip the slice in the breadcrumb mix, coating the slice completely. Put coated Zucchini slice onto the prepared cooking sheet. Repeat until all the Zucchini slices are done.

Step Four: Preheat the air fryer to 400 degrees F, air fryer setting, and spray the basket with cooking spray. Description

Ingredients 

  • 1 cup Panko breadcrumbs
  • 1/2 cup parmesan cheese, grated
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1 medium zucchini, sliced
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten

Instructions

  • Line a large cooking sheet with parchment paper.
  • In a medium bowl, combine b1 cup Panko breadcrumbs, 1/2 cup parmesan cheese, 1 teaspoon garlic powder, 1 teaspoon paprika, 1 teaspoon oregano, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Adjust seasonings to taste. Set aside.
  • Slice the 1 medium zucchini into ¼-inch thick slices.
  • Dip each Zucchini slice first in 1/4 cup all-purpose flour to completely coat, then shake off the excess flour.
  • Next, dip the floured slice in the beaten 2 large eggs, shaking off the excess.  
  • Finally, dip the slice in the breadcrumb mix, making sure to coat the slice completely. Put coated Zucchini slice onto the prepared cooking sheet. Repeat until all the Zucchini slices are done.
  • Preheat the air fryer temperature to 400 degrees F and spray the basket with cooking spray.
  • Put coated Zucchini into the air fryer basket in a single layer and spray lightly with cooking spray. Set cook time for 8-10 mins, until golden and crispy.
