How To Make Air Fryer Parmesan Crusted Zucchini Crisps
Line a large cooking sheet with parchment paper. In a medium bowl, combine breadcrumbs, parmesan, and spices. Adjust seasonings to taste. Set aside.
Slice the Zucchini into ¼ inch thick slices.
Dip each Zucchini slice first in flour to completely coat, then shake off the excess flour. Next, dip the floured slice in beaten egg, shaking off the excess.
Finally, dip the slice in breadcrumb mix, making sure to coat the slice completely. Put coated Zucchini slice onto the prepared cooking sheet. Repeat until all the Zucchini slices are done.
Preheat the air fryer to 400°F, air fryer setting, and spray the basket with cooking spray.
Put coated Zucchini into the air fryer basket in a single layer and spray lightly with cooking spray. Cook for 8-10 mins, until golden and crispy.
Serve warm with marinara sauce or other dipping sauce of choice.
Pro Tips:
- If your air fryer is smaller, you will have to cook in batches. Do not overcrowd the air fryer. I have made this in several air fryers, including the Ninja Foodi. The recipe will remain the same no matter if you use an Air Fryer Basket or Oven Model.
- For extra spice, add some red pepper flakes to the breadcrumb mix.
- For best results, try to slice the zucchini in about the same thickness. This way, they all cook up at the same time.
Do not crowd your basket. Otherwise, the Air Fryer Parmesan Crusted Zucchini Crisps will not cook up correctly. - Air fryer temperatures vary between brands so that cooking times may vary
- Leftovers can be stored in an airtight container in the fridge for 3 days
- To reheat, preheat Air fryer to 375°F and cook for 2-3 mins.
How To Store Leftover Parmesan Crusted Zucchini Crisps
If you have any leftovers, you can easily store them. Let them cool to room temperature, and then place them into an airtight container. They will last for about 2 to 3 days in the refrigerator.
To Reheat Them: Place them into your air fryer, and cook for about 2 to 3 minutes at 375 degrees F, air fryer setting. You can spray them with cooking spray to help them re-crisp.
Best Dipping Sauces To Serve With
Today, I served mine with a simple homemade blue cheese dressing. Still, some other great options are GREEK YOGURT BBQ SAUCE, CILANTRO-LIME SOUR CREAM CREMA, OUTBACK BLOOMIN ONION SAUCE, or TGIF CREAMY CUCUMBER-WASABI RANCH DIP.
Variations Of Spices and Seasonings
This recipe can easily be changed out by adding a few seasonings. Some of my favorites are Ranch Seasoning, Homemade Chili Powder, or Taco Seasoning.
My kids love this with a few red pepper flakes or a teaspoon of Sriracha Sauce in the egg batter.
