Ingredients Needed

Ingredients needed for Air Fryer Potato Rolls on kitchen table.
  • Active Dry Yeast
  • Water: Make sure that you use water between 105 degrees F to 115 degrees F
  • Mashed Potatoes: You can either use homemade or store-bought, make sure they are warmed.
  • Sugar: You can use regular, granulated sugar.
  • Shortening: Use vegetable shortening.
  • Eggs: I used large room-temperature eggs
  • Salt: Adds some great flavor to the rolls
  • All-Purpose Flour: You can also use gluten-free all-purpose flour, I recommend King Arthur’s Gluten-Free All-Purpose Flour, it will give you the best texture.
  • Butter: I would recommend that you use unsalted, if you only have salted butter, omit the salt.
  • For Serving: Serve with fresh herbs, butter, or jam

How To Make Air Fryer Potato Rolls

Mixing yeast in warm water and combining mashed potatoes, sugar, shortening, eggs, salt, and water in a bowl.

Step One: Start by dissolving the years into ⅔ cup of warm water. Then in another bowl, combine the mashed potato (make sure they are warm), sugar, shortening, eggs, salt, and the rest of the water.

Adding yeast mixture to dough, forming dough balls, and placing in greased dish for rising.

Step Two: Add in the yeast mixture, and slowly add the flour, until you have a dough. Place your dough into a greased bowl, and then cover it with a kitchen towel, until it doubles, for about an hour.  Form your dough into 1 to 2-inch balls. Place into a greased oven-safe dish or cast iron pan.

Step Three: Cover with a kitchen down, and let rise for another 30 to 50 minutes, until doubled. Place your rolls into the air fryer temperature to 320 degrees F, air fryer setting, set cook time for 15-20 minutes.  Remove and brush with melted butter and fresh herbs, right before serving.

Air Fryer Potato Rolls Recipe Tips

  • Use warm mashed potatoes: Ensure the mashed potatoes are warm when mixing with the dough for a better texture.
  • Don’t rush the rising time: Allow the dough to rise fully for about an hour to get the soft, fluffy texture in the rolls.
  • Grease the pan well: Make sure the baking dish or air fryer basket is greased to avoid sticking and ensure an even bake.
  • Adjust for size: If making smaller or larger rolls, be mindful of adjusting the cooking time slightly to ensure they cook thoroughly.
  • Brush with butter: For an extra golden and flavorful finish, brush the rolls with melted butter as soon as they come out of the air fryer.

Storing

  • Storing: Store leftover Air Fryer Potato Rolls in an airtight container at room temperature for up to 2-3 days. For longer freshness, keep them in the refrigerator.
  • Freezing: To freeze, wrap the cooled rolls in plastic wrap or foil, then place them in a freezer bag for up to 3 months. Thaw them overnight in the refrigerator or at room temperature before reheating.
  • Reheating: Reheat the rolls in the air fryer at 350°F for 3-5 minutes for a warm, soft texture. You can also microwave them for 15-20 seconds if you’re in a hurry.

Air Fryer Potato Rolls Recipe Faqs

Can I use instant potatoes for this recipe? Yes, you can use instant mashed potatoes, but using freshly mashed potatoes for the best flavor and texture is recommended.

Can I make the dough ahead of time? Yes, you can prepare the dough the night before, allow it to rise, and then store it in the refrigerator overnight. Let it come to room temperature before shaping and cooking.

Can I use a different type of flour? All-purpose flour works best for this recipe, but you can try whole wheat flour for a denser texture. Just keep in mind it may affect the rise and softness.

How do I know when the rolls are fully cooked? The rolls should be golden brown on the outside and sound hollow when tapped on the bottom. You can also use a kitchen thermometer—an internal temperature of 190°F indicates they are done.

How can I make these rolls dairy-free? To make them dairy-free, substitute the butter with a dairy-free butter alternative and use a non-dairy milk such as almond or oat milk.
