Air Fryer Loaded Mashed Potato Egg Rolls was our lunch today. I used up some leftovers, and mashed potatoes, and threw all of our favorite toppings in the mixture, then served them up with a side of sour cream.

Ingredients Needed For Air Fryer Loaded Mashed Potato Egg Rolls
- Cold Mashed Potatoes
- Shredded Cheddar Cheese
- Bacon Crumbles (cooked) or Bacon Bits
- Scallions
- Egg
- Egg Roll Wrappers
- Your Choice of Dipping Sauce
How To Cook Air Fryer Loaded Mashed Potato Egg Rolls

In a medium-sized bowl, add your cold mashed potatoes, shredded cheese, diced scallions, bacon crumbles or bits, and egg, mix well.

Layout an egg roll wrapper and then add about 2 tablespoons of filling inside of it. Using a pastry brush or your finger, brush the edges with water. Then roll up the egg roll, brush some water on the edges, and seal the egg roll.

Spray your air fryer basket with cooking spray, and then place your egg rolls into the basket, careful not to crowd the basket. Set the temperature to 340 degrees F for 8-10 minutes. (air fryer setting)

Pro Tips:
- For the best results for this recipe, really make sure that your mashed potatoes are cold.
- Mix in all of your favorite toppings. Anything goes with this recipe.
- I spray cooking spray in my basket so the egg rolls do not stick to the basket. There is nothing worse than egg rolls that stick.
- Do not crowd the basket. Otherwise, they will not cook evenly. An air fryer works by circulating hot air around the basket.
