Description

Soft air fryer potato bread rolls made with warm mashed potatoes, baked at 320°F until golden and brushed with butter.

Ingredients

  • ½ ounce active dry yeast, 2 packets
  • 1⅓ cups warm water, 110°F, divided
  • 1 cup mashed potatoes, warmed
  • ⅔ cup granulated sugar
  • ⅔ cup vegetable shortening
  • 2 large eggs, room temperature
  • 2 teaspoons salt
  • 6 cups all-purpose flour
  • 3 tablespoons unsalted butter, melted
  • Fresh herbs, for serving (optional)

Instructions

  • Stir the yeast into ⅔ cup of the warm water and let it stand until foamy, 5 to 10 minutes.
  • In a large bowl, mix the warm mashed potatoes, sugar, shortening, eggs, salt and the remaining ⅔ cup warm water.
  • Stir in the yeast mixture. Add the flour gradually until a soft, slightly tacky dough forms, then knead until smooth.
  • Place the dough in a greased bowl, cover with a kitchen towel and let it rise until doubled, about 1 hour.
  • Punch down the dough and shape it into 1- to 2-inch balls. Arrange them close together in a greased pan that fits your air fryer basket.
  • Cover and let rise until doubled, 30 to 50 minutes.
  • Air fry at 320°F for 15 to 20 minutes, until deep golden brown and 190°F in the center. Repeat with the remaining rolls.
  • Brush with melted butter, sprinkle with fresh herbs and serve warm.

Equipment

  • Air fryer (basket or oven style)
  • 7- or 8-inch oven-safe baking pan or cast iron skillet that fits inside your basket
  • Large Mixing Bowl
  • Small bowl or liquid measuring cup, for blooming the yeast
  • Instant-read thermometer, to check the water temperature and 190°F doneness
  • Measuring Cups and Spoons
  • Clean kitchen towel, for covering the dough
  • Pastry brush for the melted butter
  • Cooking spray, for greasing the bowl and pan

Notes

  • Bake in batches. Refrigerate shaped rolls that are waiting, so they don't over-proof.
  • If the tops brown too fast, tent the pan loosely with foil for the last few minutes.
  • Store at room temperature for 2 to 3 days, or freeze for up to 3 months. Reheat at 350°F for 3 to 5 minutes.
