Pro Tips For The Best Air Fried Indian Potatoes

  • Type Of Potatoes: You can use Yukon gold, red, or baby potatoes for this recipe.
  • Cutting: Cut the potatoes into the same size for best results, so they all cook up simultaneously.
  • Oil: For less smoking, use high-heat oil, such as avocado oil, olive oil, or grapeseed oil. I do not use vegetable oil or canola oil in the air fryer since it usually causes smoke from the air fyrer.

Ingredient Notes:

This recipe contains a lot of Indian spices. You can also use some of these for quick substitution, although the taste will change slightly.

  • Amchur: You can also substitute for dry mango powder; I did not find this at my local grocery store; I ordered it from Amazon. If you have an Indian market near you, I recommend picking that popular spice there.
  • Spiceness: Kashmiri Red Chili Powder is spicy; cayenne pepper or paprika can also be used.

To store in the refrigerator, allow the potatoes to cool completely before transferring them into an airtight container or storage bag. This means they’ll break down faster while air frying and become fluffy and light in texture. They’ll also absorb the flavors from the seasonings you add, making them more flavorful.

To ensure your roasted potatoes get crispy on the outside and creamy on the inside, cut them into cubes about 1 inch (2.5 cm) in size. This will encourage even cooking and help to form a nice, golden-brown exterior. Toss the potatoes in oil before roasting them for crispy potatoes!
