Description

Make crispy and flavorful Air Fryer Bombay Potatoes with this easy recipe. Perfectly seasoned with aromatic Indian spices, they’re a delicious side dish or snack!

Ingredients 

  • 1 pound baby potatoes
  • 3 tablespoons olive oil

Seasoning Blend:

  • 3/4 teaspoon kosher salt, or sea salt
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1/4 teaspoon turmeric
  • 1 teaspoon Kashmiri red chili powder
  • 1 teaspoon amchur
  • 1 teaspoon chaat masala

Serving:

  • 1-2 teaspoons lemon juice, or lime juice
  • 1 teaspoon lemon zest, or lime zest
  • 2 tablespoons cilantro, diced

Instructions

  • Wash the baby potatoes, and dry them with a paper towel or kitchen towel. Then using a sharp knife, cut the potatoes in half, add the olive oil and salt, and toss well, to coat the potatoes.
  • In a small bowl, add all of the Indian spices, and mix well, set aside.
  • Add the potatoes to the air fryer basket in a single layer, placing the cut side down. Set the temperature to 400 degrees F using the air fryer setting, and set the cooking time for 10-12 minutes. When the potatoes are fork-tender, remove them with a fork, and place them into a large bowl. Add 1 teaspoon of high-heat oil, then toss with the spice mixture.
  • Add the seasoned potatoes back into the air fryer basket in a single layer, set the cooking time for 5-7 minutes at 400 degrees F, and cook when the outside is crispy and golden brown.
  • Serve with a squeeze of lemon juice, and garnish with fresh herbs.
