Instructions

Ninja Foodi 9 in 1, dark loaf pan, baked 330F, 25 minutes, on rack. I left some chunks of banana and dropped in some walnuts as I fill the loaf. Lined the loaf with parchment paper, cut and folded so it lays against the loaf pan. It turned out perfect! Made multiple times. Thank you for the recipe!

This recipe is great! I did mini muffins and they rose perfectly..I just kept checking on them. The first 6 were slightly underdone so I just increased the time going forward..it’s 30 Celsius here in Saskatchewan,Canada, no way I’m using my oven. This was perfect. I did add cloves with the cinnamon as well as pecans. I wouldn’t make banana bread without either spice anymore.

I had my doubts this would work, but so glad I tried it anyway. The recipe was followed almost exactly and came out great. I added chopped pecans just to get them out of the refrigerator. My one mistake was not reading the comments. I used a rack on top of the bottom basket so the top burned a tiny bit, but it didn’t affect the texture or taste. (FYI: don’t use the rack.) The bread even more moist the next day and really good. Thanks for posting this recipe.

Laurie, I have a Gourmia basket type air fryer. When making breads/cakes do you suggest to place the mini loaf pan on a rack or just set pans inside bottom of basket? I wasn’t sure if loaf pans would bake through if sitting in bottom of basket? Thank you in advance.

I would always advise that you put the bread on the bottom tray this way the top and bottom will get cooked at the same time.

I used the cake pan included with my air fryer. This recipe did not work no matter how long I “baked” it . After 50 min in the air fryer I gave up. Inside was extremely unbaked and “raw/mushy”and outside was beautiful. Very sad because it smelled delicious . Guess I’ll need to invest in an air fryer loaf pan?

Cakes are very iffy in the air fryer, you need to either get a mini loaf pan or a bundt cake pan. The reason is simple the air fryer operates by spinning hot air around the cake pan if the pan is too thick. The hot air never reaches the center, which is why a lot of people fail at cakes. I have a pampered chef air fryer and just tried this recipe. I did make it in their small bundt cake pan. did 20 minutes on custom at 300 degrees then another 5 minutes on the same setting . toothpick was just a little wet the first time when i used it. Now to wait till its cool enough to eat.. smells delicious
