What Type of Pork Chops To Use
Pork chops come in a variety of cuts, the best ones to use for stuffing are:
Blade Chop: Blade chops are the fattiest cut from pork shoulder. The meat is dark and juicy with a crisp exterior that will make you want to sink your teeth into it!
Rib Chop: Rib Chops come from just below our most prized cut: The Loin (sometimes called “loins”) have a bit more fat on them than boneless pork chops, but the fat cooks up perfectly and coats the pork chops as it cooks up.
What Type of Stuffing To Use
You can either use boxed stuffing or homemade stuffing. The key is to prepare it as you would and then use it.

How To Make The Cut In The Pork Chop
Using a sharp or paring knife, cut slits in each chop. To do this, insert the knife horizontally into the fat-covered edge and move back and forth 1 1/2 – 2 inches wide to make a great place to add your filings.
The key is to make sure that you do not cut all the way through. You can use toothpicks if needed to close it back together.
