  • Italian Sausage – Provides a burst of flavorful heartiness. Or change the sausage to turkey or chicken (or plant-based) sausage.
  • Cottage Cheese – Adds a creamy and fluffy texture to these bites. You can also use Greek yogurt or cream cheese, for similar texture.
  • Mozzarella – Melts nicely in the egg mixture. Or use cheddar, Monterey Jack, or a nondairy cheese replacement.
  • Red Bell Pepper – For sweetness and for the vibrant color. Instead of celery, try green bell pepper, mushrooms or zucchini.
  • Green Onions – Add a nice little fresh onion bite. Swap for chives, shallots or slivers of white onion will work.
  • Salt & Black Pepper – You can add garlic powder, Italian seasoning or red pepper flakes if you prefer them for an extra flavor kick.

How To Make Starbucks Italian Sausage Egg Bites

Mix ingredients in the mixing bowl, with a whisk.

Step 1: Brown and cook Italian sausage in large skillet over medium heat. Drain off any extra grease, and reserve.

Step 2: Mix the eggs together In a small mixing bowl, mix together the ingredients.

Step Three: Pour egg mixture into ramekins, then place in air fryer basket. Set the air fryer temperature to 375 degrees F, and set cook time for 8-10 minutes or until set.

Starbucks Italian Sausage Egg Bites Recipe Tips

  • Silicone molds or ramekins – These fit nicely in most air fryers and don’t stick.
  • Do not overfill molds – Only fill about ¾ full as the egg mixture puffs up when cooking.
  • Check doneness early – Begin checking a few minutes before the recipe time is up, as air fryers can vary slightly in how quickly they cook.
  • Throw in cheese at the end — You can sprinkle cheese on it during the last 2 minutes of oven time for a golden and melty crunch.
  • Chill –Let the egg bites sit for 2–3 minutes is in the tray so they maintain their mold shape before removing.

Storing, Freezing & Make Ahead Instructions

  • Storing: Store any remaining egg bites in an airtight container in the refrigerator for up to 4 days. Allow to cool completely before storing, so they won’t get soggy from condensation.
  • Freezing: Freeze cooled egg bites on baking sheet until firm, then transfer to freezer-safe bag and freeze for up to 2 months. Reheat straight from the freezer in the air fryer, or microwave.
  • 🕒 Make Ahead: Make the sausage and egg mix the night before and place in silicon muffin molds into refrigerator. Throw them straight into the preheated air fryer in the morning for quick, hot egg bites.

Can I make these egg bites if I don’t have an air fryer? Yes! You can bake them in a water bath at 325 degrees for about 25–30 minutes until set.

What kind of sausages are best? You can use either mild or spicy Italian sausage — it all tastes good. Turkey sausage or even chicken sausage could be used as a lighter alternative.

How do you prevent egg bites from sticking? Line cupcake molds with silicone liners or lightly coat muffin cups with nonstick cooking spray.

Ingredients 

  • 6 large Eggs
  • 1/2 pound Italian Sausage , cooked and crumbled
  • 1/2 cup Cottage Cheese
  • 1/2 cup Mozzarella Cheese , Shredded
  • 1/2 cup Red Bell Pepper , finely diced
  • 1/4 cup Green Onions , chopped
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  • Start by spraying olive oil in the egg mold, including the sides.
