- Boneless, skinless chicken breasts — Seasoned and grilled, then sliced into strips. - Heavy cream — Non-negotiable for the texture. Half-and-half will work but the sauce will be noticeably thinner.

How To Make Copycat Pizza Hut Chicken Alfredo

Step One: Cook the pasta. Bring a large pot of well-salted water to a boil and cook the rotini to just under al dente — about one minute shy of the package time. It will finish cooking in the oven, and pulling it early is the difference between baked pasta and mush. Drain, but reserve half a cup of the pasta water.
Step Two: Cook the chicken. Season the chicken breasts with salt and pepper and cook them through in a skillet, on the grill, or in the air fryer at 375°F for about 12 to 15 minutes, until they reach an internal temperature of 165°F. Let them rest five minutes, then slice into strips.

Step Three: Build the Alfredo sauce. In a saucepan over medium heat, melt the butter. Add the minced garlic and cook 30 seconds, just until you can smell it. Pour in the heavy cream and bring it to a gentle simmer — do not let it boil. Whisk in the softened cream cheese until fully melted, then reduce the heat to low and add the Parmesan a handful at a time, whisking constantly. Season with salt, pepper, and nutmeg.

- Grate your own cheese. Bagged shredded cheese contains cellulose that prevents smooth melting. This one change fixes most Alfredo problems.

Does Pizza Hut’s chicken alfredo have pesto in it? No. Pizza Hut’s version is a straightforward creamy Alfredo with chicken and cheese — no pesto. A pesto version is delicious, and I have included it under Variations above, but it is a twist rather than a true copycat.
Should I use rotini or fettuccine? Rotini, if you want it to taste like Pizza Hut. The chain specifically uses rotini because the spirals hold onto the thick sauce. Fettuccine makes a lovely Alfredo, it just is not this one.
