Air Fryer Polenta Lasagna Cakes —This is one of my favorite Italian dishes, my mom used to make when I was a child, today I threw it into the air fryer, and what returned was even better than I remembered.

If you love lasagna, this is the perfect recipe for you; it can serve as either an appetizer or a side dish. I usually serve this with a bed of spaghetti. 

Covered in marinara sauce and shredded mozzarella cheese, this will melt in your mouth; it’s a great and quick appetizer, and they make fabulous snacks!

What is Polenta?

Polenta comes in two forms; one is cooked, dan one is uncooked. You can usually tell the difference at the grocery store since one comes as grain and comes in a roll.

Polenta is ground cornmeal used in several Italian, Romanian, Moldova, and Argentina dishes. 

The cooked polenta is sold in tubes at the grocery store, Trader Joe’s, and Costco. They are traditionally baked or pan-fried. And then topped.

My mother used to make lasagna from the bottom in my household since you can top them with anything, including traditional lasagna toppings.

  • Tube of Polenta
  • Marinara Sauce
  • Shredded Mozzarella Cheese
  • Dried Basil
  • Cooking Spray

How To Make Air Fryer Polenta Lasagna Cakes

Cut Polenta into Slices and air fry

Cut the polenta into about 1-inch slices. As you cut them, Place them in a greased air fryer basket or on a greased air fryer tray (sprayed with olive oil), Then spray the polenta’s top with olive oil.

Set the polenta into the air fryer, at 400 degrees F, for 5 minutes. (air fryer setting), after 5 minutes, flip the polenta and air fry for another 5 minutes.

Spread Marinara Sauce on top and shredded mozzarella cheese

Then spread the marinara sauce over the polenta top. Sprinkle some shredded mozzarella cheese and basil over the top of the sauce. Return to air fryer and air fry again 400 degrees F (air fryer setting) until the cheese melts.

How To Store Air Fryer Polenta Lasagna Cakes

If you have any leftovers, let them cool to room temperature, and then place them into an airtight container. And place it into the refrigerator. They will last about 3 to 4 days. 

To Reheat: Place them back into the air fryer basket, air fry for about 4 to 5 minutes at 350 degrees F, air fryer setting.

Can You Freeze Air Fryer Polenta Lasagna Cakes?

No, these are easy enough to make that you do not freeze them. This recipe does not include a freezer well; as the polenta defrosts, it becomes watery.

Polenta is a versatile item; you can top them with anything you make; they make easy and delicious pizzas and add mini pepperoni.

There are several ways to use them. You can also use polenta, like gluten-free bread, for other ideas.

  • 1 cup marinara sauce, or tomato sauce
  • 1/2 cup mozzarella cheese, shredded
  • 1 teaspoon dried basil

Instructions

  • Cut the polenta into about 1-inch slices. As you cut them, Place them in a greased air fryer basket or on a greased air fryer tray (sprayed with olive oil)
  • Then spray the polenta’s top with olive oil.
  • Set the polenta into the air fryer, at 400 degrees F, for 5 minutes. (air fryer setting), after 5 minutes, flip the polenta and air fry for another 5 minutes.
  • Then spread the marinara sauce over the polenta top.
  • Sprinkle some shredded mozzarella cheese and basil over the top of the sauce.
  • Return to air fryer and air fry again 400 degrees F (air fryer setting) until the cheese melts.
  • Plate, serve and enjoy!
