In this post, I’ll tell you how to make scones in the air fryer (homemade or from muffin mix), tips for making the perfect scones, and the right tools and pan to make your air fryer scones a success.

If you have never made scones or even eaten them, you are missing out! They are one of my favorite breakfasts on a lazy weekend morning. My kids love them, and I enjoy them with a great big cup of hot coffee.
The air fryer does a fantastic job at baking. If you have not yet baked with your air fryer, this recipe is a great place to start. Easy and delicious.
What Are Scones?
When we think of scones, we often think of a dry, baked good. But these Air Fryer Blueberry Scones come out moist and delicious.
Scones can be sweet or savory and are usually cut or shaped into wedges. American scones are sweeter and less dense than their British counterpart, which they sometimes call biscuits.
In England, scones are typically served with lemon curd, clotted cream, or jam. In America, we tend to eat them as they are.
Scones are a fabulous breakfast treat or anytime dessert. This air fryer scone recipe can also be made with other fruits or savory ingredients. Some of my favorite sone recipes include:

Recipe for Blueberry Scones in the Air Fryer
This air fryer scone recipe is very straightforward. You probably have most of the ingredients in your pantry! I always use fresh blueberries, but you can use frozen blueberries. Just do not thaw them, as they will make your dough soggy.

- 2 cups all-purpose flour
- 3 T granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- ¼ cup cold/frozen butter
- 1 large egg
- ⅓ cup milk + 2 Tbsp for icing
- ¾ cup fresh blueberries
- ½ tsp pure vanilla extract
- 1 cup powdered sugar
Note: Using cold or frozen butter is really important in preparing scones – it’s the cold/frozen butter that gives the scones their wonderful, flaky texture.
How To Make Air Fryer Blueberry Scones
Start by mixing the flour, sugar, baking powder, and salt in a large mixing bowl. Cut in the butter, then add egg and milk. Mix well until combined, then fold in the blueberries.

Spray your mold with olive oil spray (see below for information on the mold I use). Add your batter to the mold, and place the mold into the air fryer basket. Set the temperature to 340 degrees F for 10 to 12 minutes.

Meanwhile, prepare the vanilla glaze. In a small bowl, add the powdered sugar, milk, and vanilla. Mix until it’s well combined.
When the scones are done, let them cool a bit, then drizzle them with icing.
How to Make Scones from Muffin Mix
Another option for making easy scones in the air fryer is to use Jiffy Blueberry Muffin Mix. Gather the following ingredients:
- 2 packages Jiffy Blueberry Muffin Mix
- 1/2 cup flour
- 1/4 cup butter
- 1/2 cup sour cream
- 1/4 cup fresh or frozen blueberries
To make your scones from the muffin mix, blend all ingredients except the blueberries in a large mixing bowl until well combined, but don’t overmix. Fold in the blueberries, then press your batter into your mold, making sure to press the edges firmly in.

Set the pan in the air fryer for 12 to 15 minutes at 320 degrees F, air fryer setting. After 12 minutes, flip them and cook the bottom for about 2 minutes more.

How to Bake Scones that are Not Hard and Crumbly
There are really only two reasons why scones end up hard: they are overmixed, or you have overbaked them.
When you overmix your dough, the gluten gets released, making your baked goods dense and hard. So once the batter is mixed, set it aside. There is no reason to keep on mixing batter that is already well combined.
The other reason why your Air Fryer Blueberry Scones will become hard is that you have overbaked them. The exact time will depend on your air fryer. I usually start checking them at around minute 8. Use a toothpick to test if the inside is done.

Can I Add Other Fruit Besides Blueberries?
Yes, you can add any fruit that is in season or that you like. Remember to cut your fresh fruit into small pieces. This is important if you are using peaches or apples. I also like using dried fruits and nuts.
Some popular add-ins for American scones are cherries, chocolate chips, cranberries, cinnamon, and raisins.

Do you need to put anything on your scones? Traditionally the English serve scones with jam, butter, lemon curd, or clotted cream. In America, we often use icing, which provides enough flavor and sweetness that you really do not need to put anything else on your scone.
Tools Needed to Make Air Fryer Scones
I have been making air fryer scones for years. I always say you can make anything in the air fryer if you have the correct pan. Scones are no different.

This silicone scone mold (affiliate link) works great for me. And with a pair of kitchen shears, you can easily create a scone pan that will fit ANY air fryer!

If you have the Omni Air Fryer by Instant Pot or another large air fryer oven, this cast iron scone pan works perfectly. I already had this pan from my days of using a normal range, and it’s one of my favorite pieces, so of course, I pulled it out for this recipe.
Tips for Making the Perfect Scones in Air Fryer
- The milk and butter need to be cold. This gives your scone a great flaky texture.
- Do not preheat the air fryer, as it will not bake correctly.
- If using frozen blueberries, do not thaw them before use, as they will cause your scones to become soggy and watery.
- Once the dough is mixed, do not keep working the dough, or the gluten will break down and your scones will end up hard.
- Once the scones are done, allow them to cool before icing them.
- If you have any leftovers, place them in a sealed or airtight container. For best results, eat leftover scones within two days.
Can You Make Air Fryer Scones Ahead of Time?
To make this air fryer scone recipe ahead of time, make the dough and shape the scones. Then wrap them individually in plastic wrap, and place them in the refrigerator until ready to air fry. They are best if air-fried within one to two days.
Can you freeze scones? If you want to freeze the dough, shape the dough and individually wrap them in plastic wrap. They will keep it for about one month in the freezer. When ready to air fry them, either fry them from frozen (add a couple of minutes to the recipe) or let them thaw in the refrigerator.
