One of the best things about making anything gingerbread is the use of molasses. Molasses has a rich deep flavor that is enhanced greatly with the ground cinnamon and ground ginger.
Here Are Some Scone Baking Tips–
Butter: Butter is a key ingredient in making scones, the best thing is to either freeze the butter or uses it straight from the refrigerator. Either way cold. That is the great secret to getting a flaky scone.
Mix Dry Ingredients: Combine all of the dry ingredients, all scones have the same basic ingredients, flour, brown sugar, baking powder, baking soda, and salt.
Note: If you are using salted butter, do not add salt, the scones will come out too salty.
How to Make Scones In Advance–
It is very easy to make scones in advance.
Just prepare your dough, and you can either store the dough in a sealed container or shape the scones and then wrap them in saran wrap.
Freezing Scones: If you are looking for a recipe that you can freeze, you can also freeze the baked scones. Then when you want a quick breakfast, simply pop the frozen scone into the oven or air fryer and heat them up.

Ingredients
Scones:
- 2 cups all-purpose flour
- 4 tablespoons brown sugar
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup cold butter
- 1/3 cup molasses
- 1 egg yolk
Topping:
- 1 egg white, beaten
- 1 tablespoon sparkling sugar
Instructions
- In a large mixing bowl mix together the flour, brown sugar, baking powder, baking soda, ground ginger, ground cinnamon, and salt.
- Mix int he butter, and mix until the mixture is crumbly.
- Mix in the molasses, milk, and egg yolk.
- Mix until the mixture comes together.
- Use some olive oil spray and coat your scone pan.
- Pat the batter into the wedges.
- Brush the beaten egg white on top, and then sprinkle with some sparkling sugar.
- Set the scone pan, into the air fryer at 330 degrees F, (air fryer setting) for 12-16 minutes.
- Plate, serve, and enjoy!
