- Preheat your air fryer to 350 degrees F (175°C). If your air fryer requires preheating, follow the manufacturer's instructions. Line the air fryer basket with parchment paper for easy cleanup.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- In a separate large mixing bowl, whisk together the heavy cream, egg, and vanilla extract.
- Pour the wet ingredients into the dry mixture. Gently fold until just combined. Be careful not to overmix.
- Gently fold in the fresh blueberries, careful not to burst them.
- On a lightly floured surface, shape the dough into a 6-inch circle about 1 inch thick. Cut into 8 equal separate wedges.
- Place scones in the air fryer basket, ensuring they are not touching. You may need to cook them in batches depending on the size of your air fryer.
- Lightly brush top of dough with a bit more heavy cream. This will help them brown nicely.
- Set cook time for 15-20 minutes until golden brown and a toothpick inserted into the center comes out clean.
- Cool the scones on a wire rack for a few minutes before serving. This allows them to set and makes them easier to handle.
- Drizzle the icing over the top of the scones.
