Why You Will Love This Recipe!
- Quick and Easy: These banana scones come together in no time, making them the perfect quick breakfast or snack option.
- Perfectly Moist: The natural sweetness and moisture from ripe bananas make these scones soft, tender, and absolutely delicious.
- Air Fryer Convenience: Skip the oven! The air fryer cooks these scones perfectly, giving them a golden, crispy exterior while keeping the inside fluffy and light.
- Customizable: You can easily add your favorite mix-ins, like chocolate chips or nuts, for a personalized touch.
Ingredients Needed
- Jiffy Banana Muffin Mix: Provide the base of the scone recipe, offering a sweet, rich banana flavor.
- All-Purpose Flour: Helps to give the scones structure, making them light and tender.
- Butter: Adds richness and moisture to the scones, making them soft and flaky.
- Sour Cream: Enhances the texture, making the scones moist and adding a slight tang to balance the sweetness.
- Powdered Sugar (Icing): The powdered sugar in the icing creates a smooth, sweet glaze that adds a touch of sweetness to the scones.
- Milk or Maple Syrup (Icing): Used to create the perfect consistency for the glaze, adding a hint of flavor to complement the banana scones.
How To Make Air Fryer Banana Scones
Step One: Mix the banana muffin mix, flour, butter, and sour cream in a large mixing bowl. Blend until everything is well combined.
Step Two: Pour the batter into your scone pan. Press your batter into the mold, pressing the edges firmly in. Set in the air fryer basket or air fryer oven and set cook time for 12-15 minutes.
Air Fryer Banana Scones Recipe Tips
- Don’t Overmix: When combining the ingredients, mix gently. Overmixing can lead to dense scones instead of light and fluffy ones.
- Chill the Dough: If you have time, chill the dough for about 10-15 minutes before cooking. This helps the scones hold their shape and bake more evenly in the air fryer.
- Check for Doneness: Air fryer times can vary depending on the brand and size of the scones. After about 10 minutes, check them with a toothpick to see if they’re done. If it comes out clean, they’re ready!
- Customize with Add-ins: Add chocolate chips, nuts, or dried fruit to make your scones even more special. You can also drizzle the scones with a glaze or icing for extra sweetness.
- Air Fryer Basket or Tray: If you’re using a basket-style air fryer, make sure the scones aren’t touching each other for even cooking. You can also use an air fryer tray for more space.
- Serve Fresh: These banana scones are best enjoyed fresh out of the air fryer, but you can also store leftovers in an airtight container for up to 2 days.
Storing
- Storing: To store your Air Fryer Banana Scones, place them in an airtight container at room temperature for up to 2-3 days. If you prefer them warm, simply reheat them for a few seconds in the air fryer or microwave.
- Freezing: For longer storage, freeze the scones by wrapping them individually in plastic wrap and placing them in a freezer-safe bag. They can be stored for up to 3 months, and reheated directly from frozen in the air fryer for a fresh-tasting treat.
- Reheating: To reheat, place the scones in the air fryer at 300°F for about 3-5 minutes or until warmed through. You can also microwave them for 10-15 seconds for a quicker option, though the texture may not be as crisp.
Air Fryer Banana Scones Recipe Faqs
Can I use a different muffin mix for this recipe? Yes, you can use any flavored muffin mix you prefer, such as blueberry, apple cinnamon, or pumpkin, for a fun twist on this recipe.
Can I make these scones without sour cream? If you don’t have sour cream, you can substitute it with plain yogurt or buttermilk for a similar texture and tangy flavor.
Can I freeze the scones before or after baking? You can freeze the scones both before or after baking. If freezing before baking, form the dough into scone shapes, freeze on a baking sheet, and transfer to a freezer bag. If freezing after baking, allow the scones to cool completely, then wrap and store in an airtight container.
How do I prevent the scones from getting too dry? To keep your scones soft and moist, be careful not to overwork the dough. Mix just until combined and avoid overbaking them.
Can I make these scones without using an air fryer? Yes, you can bake these scones in a traditional oven. Preheat to 375°F and bake for about 12-15 minutes or until golden brown on top.
How can I make these scones healthier? You can swap the butter for coconut oil or reduce the amount of sugar. You could also use a whole wheat flour or a sugar substitute in the icing for a healthier version.

My grocery doesn’t carry jiffy muffin mix except for corn and sometimes blueberry, so I substituted Martha White Banana Nut muffin mix. Just one punch and halved the rest of the ingredients, only adding Health Toffee Chips for fun. The scones were air fryer baked in a 6” springform pan @325F for 12 minutes. I used a vanilla glaze. While they did not rise, they still made a nice breakfast for the two of us.
