This is such a quick breakfast. My kids absolutely love these, and one of the best things is that you can fill them with anything you want. Today, I used scrambled eggs and cheddar cheese. But use whatever you have on hand. I was thinking of changing out next time to a Western Omelet.

What is A Breakfast Quesadilla?
A breakfast quesadilla is just as it sounds like it’s a tortilla wrap filled with traditional breakfast ingredients.
Today, I made a really easy one, made with eggs, cheese, and tortilla wraps; it’s perfect. You end up with great and light breakfast quesadillas filled with all of the goodness of a homemade breakfast sandwich.
You can add any meat that you want to this quesadilla. Bacon, sausage, chorizo sausage would all work here. The key would be to have the meat cooked and then add it in.
This is an extremely versatile dish, so anything that you love for breakfast can be added. So, the next time you are looking for an easy breakfast that your entire family will love, look no further; this is sure to be one of your favorites.
Ingredients For Air Fryer Breakfast Quesadilla
- Black Pepper
- Corn or Flour Tortillas
- Shredded Cheddar Cheese
- Toppings: Sour Cream, Salsa, Guacamole, Shredded Cheese, etc.
How To Make Air Fryer Breakfast Quesadilla
In a small mixing bowl, crack the eggs, add the milk, salt, and pepper.
Whisk the eggs, milk, salt, and pepper together.
Add a tablespoon of butter to a small skillet, turn the burner to a simmer, melt the butter partially, and add the egg mixture. Keep on moving the eggs with a spatula until they are cooked.
Place a tortilla shell on the bottom of a greased air fryer tray or a greased air fryer basket (both sprayed with olive oil). Add a couple of tablespoons of scrambled eggs on top of the tortilla. Sprinkle the shredded cheddar on top of the scrambled eggs. Add another tortilla on top, and press down, place in the air fryer for about 4-5 minutes at 320 degrees F. (air fryer setting)
What To Serve With Air Fryer Breakfast Quesadilla?
This is a really easy breakfast to make, and it’s the perfect on the go breakfast, but you can serve it with any of your traditional Mexican toppings, some of my favorite toppings:
- Sour Cream
- Diced Tomatoes
- Shredded Cheese
- Sour Cream
- Pico de Gallo
- Sliced Jalapenos
How to Store Breakfast Quesadillas
This is a great recipe to make ahead of time, and Air Fryer Breakfast Quesadilla does amazingly well reheated. So, if you want to make a batch and then reheat them in the air fryer, follow these instructions.
Prepare the Air Fryer Breakfast Quesadilla as directed in the recipe below. And place the leftover Quesdaills into an airtight container, and place the container into the refrigerator.
Then to reheat, place the Air Fryer Breakfast Quesadilla into the air fryer basket, spray it with cooking spray, and air fry for 2 to 4 minutes at 350 degrees F, air fryer setting, until the tortilla is warmed through.
How to Freeze Breakfast Quesadillas
If you want to make a batch for your freezer, this recipe freezes really well. To freeze, make as directed, and then place on a parchment-lined baking sheet. Place the baking sheet into the freezer until the Quesadillas are frozen solid.
Remove and place into a freezer bag, where they will last for about 2 to 3 months.
To Reheat: Place the frozen Air Fryer Breakfast Quesadilla into the Air Fryer Basket, and air fry for 7 to 9 minutes at 350 degrees F, air fryer setting. Heat until warmed up and the cheese is melted.
