This is such a quick breakfast. My kids absolutely love these, and one of the best things is that you can fill it with anything you want. Today, I used scrambled eggs, and cheddar cheese. But use whatever you have on hand, I was thinking of changing out next time to a Western Omelet.
Here are the simple instructions so you can make it in your very own air fryer,
In a small mixing bowl, crack the eggs, add the milk, salt, and pepper.
Whisk the eggs, milk, salt, and pepper together.
Add a tablespoon of butter to a small skillet, and turn the burner to a simmer, melt the butter partially, and then add the egg mixture. Keep on moving the eggs with a spatula, until they are cooked.
Place a tortilla shell on the bottom of a greased air fryer tray or a greased air fryer basket (both sprayed with olive oil)
Add a couple of tablespoons of scrambled eggs on top of the tortilla.
Sprinkle the shredded cheddar on top of the scrambled eggs.
Add another tortilla on top, and press down, place in the air fryer for about 4-5 minutes at 320 degrees F. (air fryer setting)
Plate, serve, and enjoy!
