How To Make Easy Air Fryer Black Bean Quesadillas

Step One: Start with your filling. Today I used simple black beans (warmed up and mixed with the taco seasoning) and some sauteed poblanos.

Step Two: Place the tortilla on a flat surface and then spread about 1/2 cup of the black bean mixture on the tortilla, scatter some sauteed poblano peppers on top and add some cheese.

Step Three: Place the tortilla into the air fryer tray or basket, and set the air fryer temperature to 350 degrees F, air fryer setting, and set cook time for 5 minutes, flip and air fry for another 3-5 minutes.
Note: to get the tortilla shell really crisp, I sprayed mine with cooking spray (olive oil spray) I sprayed both sides after I flipped the tortilla.

Air Fryer Black Bean Quesadillas Recipe Tips
- Don’t overfill the tortillas or they’ll split and spill in the air fryer. Less mess, more crunch.
- Brush or spray lightly with oil to help the tortillas crisp up evenly.
- Use a firm, melty cheese like Mexican blend, Colby Jack, or Pepper Jack so everything sticks together.
- Flip halfway through cooking to get both sides golden and crispy.
- Let them rest for a minute before slicing so the cheese doesn’t run everywhere.
Storing and Reheating Instructions
- Refrigerator: Store leftover quesadillas in an airtight container for up to 3 days. Freezer: Wrap tightly in foil or freezer bags and freeze for up to 2 months.
- Reheating Instructions:
- Air Fryer (Best Option): Reheat at 350°F for 3–5 minutes until hot and crispy.
- Oven: Warm at 375°F for about 8–10 minutes.
- Microwave: Works in a pinch, but tortillas will be softer rather than crispy.

Easy Air Fryer Black Bean Quesadillas Recipe Faqs

Can I add other vegetables? Absolutely! Bell peppers, onions, or corn work well and add extra flavor and texture.
Do I have to use an air fryer? No, but air frying gives a perfectly crispy tortilla with minimal oil. You can also cook on a stovetop skillet if needed.
What cheese works best? Use melty cheeses like Mexican blend, Pepper Jack, or Colby Jack for the best texture and flavor.
How do I prevent tortillas from sticking? Lightly spray or brush the air fryer basket or tray with cooking spray before adding the quesadillas.
Can I make these ahead of time? Yes! Store cooked quesadillas in an airtight container in the fridge for up to 3 days. Reheat in the air fryer for best results.
