Since today is Taco Tuesday, and I just made an amazing recipe in the Instant Pot, (Check that out if you have an Instant Pot, it’s so good, I promise you will love it) I immediately thought about making cheese Quesadillas in my air fryer, to go with the meal. As, I love to give my appliances equal time, LOL. My kids really love Mexican food. And, I always do some variation on “Taco Tuesday, ” to keep changing it up. This would also be a perfect recipe, for Cinco De Mayo, BBQ, Family Reunions, and it’s a great kid-friendly meal, so you can add it to any function, or special occasion.
Now, I’m a working mother, and I got the air fryer to help me with dinner, breakfast, and lunches. If you haven’t been following along, I have an entire section on my blog dedicated to the Air Fryer, in my opinion, it’s one of the best appliances that they have ever made. It also really helps with making dinner in a flash. (or breakfast, or lunch)
This is a great quesadilla because it’s actually stuffed, and since it works with a number of ingredients, you can literally throw anything you want in there, it’s great for a twist on the taco bar. Today, I just threw cheese in there, because I already had chicken quesadillas on the stove.

This recipe couldn’t be easier, add the flour or corn tortilla shell to the air fryer basket.
Sprinkle some cheese on the tortilla.
Then add the tortilla to close it.
NOTE: you need to add toothpicks to the tortilla, to close it, otherwise the tortilla will fly around.

- 1 cup grated cheddar cheese
- 8 flour or corn tortillas
- nonstick cooking spray
- toothpicks

Start by laying down on a tortilla in the Air Fryer Basket

Then sprinkle some shredded cheese on top

Then cover the cheese with another tortilla

Use toothpicks to prevent flying around. Spray the top of the tortilla with non-stick cooking spray.

Set the temperature to 320 degrees for 3 minutes, then flip and spray again and set another 2 minutes. It is done, when the cheese is melted.
**Note: Actual times will depend on the wattage of your air fryer and the amount of cheese you added.

Remove from the air fryer basket, plate, remove your toothpicks, serve and enjoy!
I’m new to air fryer “world” love using it. Unfortunately I don’t have toothpicks to close quesadillas. Can I use wooden stir sticks or paperclips?
I wouldnt use anything with metal in the air fryer, thats just my opinion. Isnt wood sticks the same as tooth picks? Good luck!
