Making Quesdaills in the air fryer is so easy. I mean, what is better than a smothered caramelized onion and mushroom quesadilla? Today, for added yumminess (is that a word), I added some shredded cheese. It was the perfect lunch!

I did not grow up eating quesadillas. As most of you know, I was raised in an Italian household. The only time I ever had Mexican food would be a monthly outing.

A quesadilla can be filled with anything that you like. You simply fill the tortilla with fillings and then add it to the air fryer for melting it. Today was inspired by some mushrooms and onions I had on hand, plus I really do love a good caramelized onion anything.

Air Fryer Caramelized Onion and Mushroom Quesadilla

Ingredients:

  • 6 flour tortillas
  • 12 ounces Cremini mushrooms
  • 1 onion. sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • Optional Toppings: Sour Cream, Salsa, Lime wedges, guacamole, shredded cheese, sliced olives, etc.

Simple Directions:

  1. In a large skillet, add the olive oil, and saute the sliced mushroom, sliced onions, salt, and pepper until browned, about 9-12 minutes.
  2. Layout a tortilla, and then add about 1/3 of the mixture in the center.
  3. Sprinkle shredded cheese on top.
  4. Cover with another tortilla, pressing down.
  5. Place in the air fryer, spray the top with olive oil, which will help the top crisp up.
  6. Set the temperature to 350 degrees F for 5-7 minutes.
  7. Let cool slightly, then cut into wedges.
  8. Plate, serve, and enjoy!
