Step Two: Cut out circles from your dough using a round 2-inch cookie cutter, a 2-inch biscuit cutter,  or a glass rim. Continue until you have made all of your dough circles; you can from the dough.

Step Three: Spoon about 1-2 tablespoons of the blueberry pie filling into the circle of pie dough, ensuring you leave space around the edges.

  • 1 cup blueberry pie filling
  • 1 large egg white
  • 2 tablespoons sparkling sugar

Instructions

  • Start by laying out your 1 package refrigerated pie crust dough on a flat surface, using a rolling pin to flatten if needed.
  • Using a round cookie cutter or the rim of a glass, cut out circles from your dough.
  • Spoon about 1-2 tablespoons of the blueberry pie filling into the center of half of the circles, ensuring you leave space around the edges.
  • Take the remaining circles and place them on top of the filled ones. Press down the edges gently with your fingers, then use a fork to crimp them shut.
  • In a small bowl, beat 1 large egg white with a tablespoon of water. Brush this mixture over the top of each hand pie. If desired, sprinkle with 2 tablespoons sparkling sugar for a sweet crust.
