Here’s what’s physically happening when you twist a strip of bacon that makes it cook and taste differently from a flat strip:

  • More surface area exposure. A twisted spiral exposes more of the bacon’s surface to the circulating air fryer heat than a flat strip does. More surface area means more Maillard reaction — more of that brown, savory, crispy exterior that makes bacon so good.

Best overall recommendation: Center-cut bacon. It’s the same thickness as regular-cut but the shorter strip fits standard air fryer baskets without needing to cut it in half. If your air fryer basket is large enough for full-length strips (most XL models are), regular-cut or thick-cut are excellent. The Critical Smoke-Prevention Guide

Works best on basket-style air fryers where the drawer is accessible.

Method 3 — Lower Temperature: Cook at 350°F instead of 400°F. At lower temperatures, the fat renders more slowly and is less likely to splatter. The tradeoff is a slightly longer cook time, but you get less smoke and more control over the final crispness. This is why 350°F is the recommended temperature for this recipe, not the 400°F that some competitors use.

Instructions

  • Place a slice of bread in the bottom drawer of the air fryer (below the basket) to absorb bacon grease drippings. Alternatively, add 1–2 tablespoons of water to the drip tray. This prevents smoking during cooking.
