Easy Air Fryer Lemon Cake Mix Cookies Recipe Tips

  • Don’t overmix the dough: Mix just until combined for soft, tender cookies.
  • Use a cookie scoop: Keeps cookies evenly sized for consistent cooking.
  • Roll generously in powdered sugar: Creates that classic crackled cookie look.
  • Space cookies apart: Leave room so they can spread slightly while cooking.
  • Watch the cook time: Air fryers vary, so check a minute early to avoid overbaking.
  • Slightly underbake: Centers should be soft; they’ll firm up as they cool.
  • Add extra lemon flavor: Mix in lemon zest or a drop of lemon extract for a stronger citrus punch.

Storing, Freezing and Reheating Instructions

  • Storing: Store cooled lemon cake mix cookies in an airtight container at room temperature for up to 4 days. This keeps them soft, chewy, and full of bright lemon flavor.
  • Freezing: Place baked cookies in a freezer-safe container or bag for up to 2 months. Thaw at room temperature before serving, or warm slightly in the air fryer.
  • Reheating: Reheat cookies in the air fryer at 300°F for 2–3 minutes or microwave for 10–15 seconds. This restores their soft, freshly baked texture and bright lemon flavor.
