How To Make Air Fryer Homemade Pierogi

There are three parts to making homemade pierogies: dough, filling, and assembling the pierogies. I broke them down for you to have great success with this recipe!

For the Dough:

In a small saucepan, melt butter with 1/2 cup of water over medium heat. In a large bowl, whisk together flour and salt. Slowly pour the melted butter mixture into the flour, stirring to form a shaggy mixture. Stir in egg and mix until combined.

Move the dough onto a floured work surface and knead for about 5 minutes until smooth dough forms. Cover with plastic wrap and allow to rest for 30 minutes.

Put cubes of potato and 1 tsp of salt into a saucepan and cover with cold water. Bring to a boil and simmer for 25 minutes, until potatoes are tender.

In a large frying pan, melt butter over medium heat. Add onions, season with salt and pepper, and sauté for 5 minutes. Add brown sugar and cook for another 7 minutes or until caramelized. Once cooked, drain potatoes and transfer them to a bowl. Mash potatoes, then add in half of the onions and cottage cheese. Season with salt and pepper and allow to cool.

On a floured surface, roll out half the dough at a time to about 1/8 inch thick. Cut out circles of dough using a 3 inch round cutter. You should get about 16 circles from each half of the dough.

Put a teaspoon of filling in the middle of each circle. Use fingers to fold the dough over filling to form a half-moon—seal in filling by pinching the sides together around the outside. If needed, use a bit of water to seal. Place formed pierogis onto a floured tray.

Bring a pot of salted water to a boil. Place a layer of pierogis in to the water, making sure not to overcrowd the pot. Once the pierogis rise to the surface, cook them for another 2-3 minutes. Once cooked, use a slotted spoon to remove boiled pierogis from the water and place them into a bowl.

Toss-boiled pierogis in a bit of oil or butter. Spread a layer of pierogi in the air fryer basket—Cook in the air fryer at 380˚ for 5 minutes or until golden.

Top with sour cream, caramelized onion, chopped parsley, and serve hot.

If you want to make a batch and reheat them during the week, make sure to put them in an airtight container. Placed in the refrigerator will last for about 3 to 4 days. You can reheat them in the microwave or the air fryer. If you want to reheat them in the air fryer, spray them with some cooking spray.

How To Freeze Pierogi

Why go through all the trouble of making your pierogi when you can freeze them? The raw formed dough is delicious, versatile, and easy. It won’t spoil like cooked pasta or rice, so there’s no need for guilt in grabbing a bagful on hand!

Ingredients 

Dough:

  • 2 cups all-purpose flour
  • 1/2 cup water
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 1 large egg, whisked

Filling:

  • 1/2 pound potato, peeled and cut into cubes
  • 2 tablespoons butter
  • 2 large onions, thinly sliced (reserve half for topping)
  • 1 tablespoon brown sugar
  • 1/2 cup cottage cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Serving:

  • 1/2 cup Caramelized Onions
  • 1 cup sour cream
  • 2 tablespoons parsley, chopped

Instructions
