I love Japanese food, I can eat it almost every day. When we go get a nice Japanese dinner out, we always get tempura for an appetizer. They are light and airy and they make an amazing treat.

This is a base recipe for any tempura you want to make, today we are using sweet potatoes, but any vegetable will work. It’s also a great way to get the kids to eat their vegetables.

What is Tempura?

Tempura is a Japanese dish that Americans are getting more and more familiar with. It’s usually made up of seafood or vegetables, battered in tempura batter, and then fried. This can be served as an appetizer, main course, or even dessert! The word “tempura” comes from the Portuguese word for “deep fry.” This is why it’s sometimes called “Japanese deep-fried food.” One of the most popular tempura dishes is shrimp tempura which consists of shrimp dipped in flour mixed with egg white and panko breadcrumbs before being deep-fried until crispy.

Today, we used sweet potatoes, as the base, and they were absolutely delicious!

  • 1/2 cup of cornstarch
  • 1/4 cup of flour
  • 1 beaten egg
  • 1/4 cup of club soda
  • 2 sweet potatoes, cut into thin slices
  • 1 cup of panko breadcrumbs
  • Other supplies needed: olive oil cooking spray

  1. Spray your air fryer basket with olive oil, or line it with parchment paper. 
  2. In a small mixing bowl, mix together the cornstarch, flour, egg, and club water.

3. Dip the sweet potato into the batter,  shaking off the excess batter. Dredge the sweet potato into the panko, coating all sides. Press down onto the coating, so it is coated.

4. Put the completed sweet potatoes into the fryer basket and spray both sides with cooking spray. Cook at 400 degrees F, air fryer setting,  for 7 to 10 minutes.

Pro Tips:

To make sure the sweet potato rounds cook quickly and evenly, be sure to slice them thinly. The thinner they are cut the quicker it will be for all pieces of that particular vegetable dish or side dish recipe!

Tempura will air-fry better if you dry them slightly with a paper towel. This way, the batter will adhere to the sweet potatoes.

For real crunchy and crispy Sweet Potato Tempura, spray the coating of the tempura with cooking spray. This will help them crunch up.

This recipe will work with any Air Fryer Basket or Oven model, the cooking time will vary slightly.

If you are using an Air Fryer Oven, place the tray on the very bottom, so that both the inside and outside will get cooked at the same time.

You can quickly reheat these in the air fryer, spray the coating generously with cooking spray, and cook for 5 to 8 minutes, at 350 degrees F, air fryer setting.

Instructions

  • In a small mixing bowl, mix together the cornstarch, flour, egg, and soda water.
  • Then dip the sweet potato into the batter, shake off the extra batter. Then place it directly into the panko, coating all sides.
  • Put the completed sweet potatoes into the fryer basket and spray both sides with cooking spray.
  • Cook at 400 degrees for 7 to 10 minutes, air fryer setting.
  • Plate, serve, adn enjoy!

Note: Club soda is used in this recipe and in traditional tempura recipes since club soda includes carbonation, which gives the tempura a crispy and light flavoring. You can find club soda in most American grocery stores.
