- 1 lbs. chicken breast
- 1-2 tsp taco seasoning
- 1 cup basmati rice, cooked
- 2 red bell peppers
- 1 yellow bell pepper
- ¼ red onion
- 15 ounces black beans
- Pico de gallo
- Sour cream
- Olive oil

- ½ beefsteak tomato
- ¼ red onion
- 1 tbsp cilantro
- 1/2 lime, juiced
- ½ tsp salt
ingredients for guacamole
- 1 ripe avocado
- ¼ red onion
- ¼ beefsteak tomato
- 1/2 lime, juiced
- ½ tsp salt
Instructions
- The first step is to prepare all your ingredients. In separate bowls, make the pico de gallo, prepare the guacamole (Feel free to use store-bought if you prefer) and drain and rinse your black beans.
- Combine the diced 1 lbs. chicken breast, 1 yellow bell pepper, 2 red bell peppers, ¼ red onion, Olive oil and 1-2 tsp taco seasoning in a large bowl. Toss well to coat.
- Then place the chicken and vegetables into the air fryer basket or air fryer tray.
- Set the air fryer temperature to 360 degrees F, air fryer setting, and set cook time for 10-15 minutes, shaking the basket during the cooking process.
- Using the rice as a base, add the air-fried peppers and onions, chicken, Pico de gallo, guacamole, black beans, and finish with Sour cream. You can also add any additional toppings that you prefer.
