Ever had a fajita? I’m guessing you have. But what about a rice bowl topped with all the delicious ingredients of your favorite chicken fajita? Well, now you can make one in less than 20 minutes, and it’s super easy! Cook up some rice, add some veggies like peppers and onion, then top it off with some air-fried chicken breast.

My son loves these and often gets a similar dish at Chiptole. But, with the air fryer, you can have this delicious copycat takeout meal in minutes! And the chicken is amazingly juicy and absolutely delicious!

This is one of my favorite midweek meals when I am hustling all over the place, and I usually prepare some of it before I go to work so that when I come home, this meal is literally waiting for me!

The ingredients are layered in the bowl, so they combine to create a delicious meal. You can add some of your favorite toppings on top!

How To Make Air Fryer Chicken Fajita Rice Bowl

Pico De Gallo in Bowl

The first step is to prepare all your ingredients. In separate bowls, make the pico de gallo, prepare the guacamole (Feel free to use store-bought if you prefer) and drain and rinse your black beans.

Combine the diced chicken, bell peppers, red onions, olive oil, and taco seasoning in a large bowl. Toss well to coat. Then place the chicken and vegetables into the air fryer basket or tray. Set the temperature to 360 degrees F, air fryer setting, and cook for 10-15 minutes, shaking the basket during the cooking process.

Using the rice as a base, add the air-fried peppers and onions, chicken, pico de gallo, guacamole, black beans, and finish with sour cream. You can also add any additional toppings that you prefer. Enjoy!

Can I Use White Instant Rice?

Yes, today, I used my Instant Pot and made a batch of Instant Pot Basmati Rice, which pairs well with this dish, but you can also use Minute Rice or any package of rice.

It’s Great for Meal Prep For The Air Fryer

As a busy working mom, meal prepping is one of my favorite strategies for keeping up with the demands of work and home. It’s so much easier to know what I need in advance than to stop at the grocery store after work every time I’m hungry.

This is a great recipe that you can easily prepare ahead of time and keep in the refrigerator for easy reheating and eating!

How to Store and Reheat

Store in an airtight container, and place into the refrigerator when you are ready to reheat; either microwave or heat until warmed through in the Air Fryer.

  • 1-2 tsp taco seasoning*
  • 1 cup basmati rice, cooked
  • 2 red bell peppers
  • 1 yellow bell pepper
  • ¼ red onion
  • 1 can black beans
  • Pico de gallo*
  • Sour cream
  • Olive oil
  • 2 teaspoons taco seasoning, homemade or store bought

  • ½ beefsteak tomato
  • ¼ red onion
  • 1 tbsp cilantro
  • 1/2 lime, juiced
  • ½ tsp salt

  • 1 ripe avocado
  • ¼ red onion
  • ¼ beefsteak tomato
  • 1/2 lime, juiced
  • ½ tsp salt

Instructions

Notes

Make Pico de Gallo: Dice the tomato and onion in equal sizes, adding seasonings and lime juice. Stir to combine.
How To Make Guacamole: First, dice the red onion and tomato into small pieces. Mash the Avocado with lime juice and salt. Use onion and tomato to sprinkle on top and then gently stir in.
