The first step is to prepare all your ingredients. In separate bowls, make the pico de gallo, prepare the guacamole (Feel free to use store-bought if you prefer) and drain and rinse your black beans.
Combine the diced 1 lbs. chicken breast, 1 yellow bell pepper, 2 red bell peppers, ¼ red onion, Olive oil and 1-2 tsp taco seasoning in a large bowl. Toss well to coat.
Then place the chicken and vegetables into the air fryer basket or air fryer tray.
Set the air fryer temperature to 360 degrees F, air fryer setting, and set cook time for 10-15 minutes, shaking the basket during the cooking process.
Using the rice as a base, add the air-fried peppers and onions, chicken, Pico de gallo, guacamole, black beans, and finish with Sour cream. You can also add any additional toppings that you prefer.
