Air Fryer Banana Scones are the cozy, bakery-style breakfast you can pull off on a busy morning — tender on the inside, lightly golden on the outside, and finished with a sweet drizzle of glaze. No oven preheating, no fuss, and the whole batch is done in under 30 minutes.

If you love the warm, comforting flavor of banana bread but never have the patience for a 50-minute bake, these scones are about to become your new go-to. The air fryer does the heavy lifting, circulating hot air to give you a soft, fluffy crumb with just the right amount of structure around the edges.

Why You’ll Love This Recipe
There’s a reason this one keeps showing up in our weekend breakfast rotation. Here’s what makes it a winner:
- Fast from start to finish. Mix, shape, air fry, glaze — you’re eating in about half an hour, most of which is hands-off cook time.
- Beginner-friendly. Even if you’ve never made a scone in your life, this recipe is nearly impossible to mess up. A banana muffin mix gives you a reliable head start.
- Soft and moist. Sour cream and butter keep the crumb tender, while banana flavor carries through every bite.
- No oven required. Skip heating up the whole kitchen. The air fryer cooks these evenly with a gently crisp exterior.
- Endlessly customizable. Fold in chocolate chips, chopped walnuts, or a pinch of cinnamon — these scones welcome add-ins.

Ingredients You’ll Need
You only need a handful of simple ingredients to make these come together, and most of them are likely already in your kitchen.

For the scones:
- Banana muffin mix – The shortcut hero of this recipe. It delivers consistent banana flavor and the right balance of sweetness without measuring out a dozen ingredients.
- All-purpose flour – A little extra flour firms up the dough so the scones hold their shape instead of spreading.
- Butter – Adds richness and that signature tender, flaky bite. Softened works best.
- Sour cream – The secret to a moist, soft crumb with a subtle tang that balances the sweetness.
For the glaze:
- Powdered sugar – The base of a smooth, sweet icing.
- Milk or maple syrup – Just enough to thin the glaze to a drizzle-able consistency. Maple syrup adds a lovely warm note.
How to Make Air Fryer Banana Scones

Step 1 – Mix the dough. In a large bowl, combine the banana muffin mix, flour, softened butter, and sour cream. Stir gently until everything just comes together into a soft, thick dough. Resist the urge to overmix.
Step 2 – Shape the scones. Press the dough firmly into a greased scone mold (or pat it into a round and slice into wedges). Pressing the edges in helps the scones bake up with clean, even shapes.
Step 3 – Air fry. Place the mold in your air fryer basket or on the air fryer oven tray. Cook at 320°F for 12 to 15 minutes, until the scones are set, golden, and a toothpick inserted in the center comes out clean.
Step 4 – Glaze and serve. Whisk the powdered sugar with milk or maple syrup until smooth. Drizzle generously over the warm scones, then plate and enjoy.

Recipe Tips for the Best Scones
- Don’t overmix. Stir only until the dough comes together. Overworking develops too much gluten and gives you dense, tough scones instead of light ones.
- Chill if you have time. Resting the dough in the fridge for 10–15 minutes before cooking helps the scones hold their shape and bake more evenly.
- Check early. Air fryer wattage varies by model. Start checking around the 10-minute mark with a toothpick so you don’t overbake.
- Give them space. If you’re using a basket-style air fryer, leave room between scones so the hot air can circulate and cook them evenly.
- Glaze while warm. A warm scone lets the glaze settle into every crevice — but wait a minute or two so it sets rather than slides right off.
- Eat them fresh. Scones are at their absolute best straight from the air fryer, while the edges are still slightly crisp.
Variations and Add-Ins
One of the best things about this recipe is how easily you can make it your own:
- Chocolate chip banana scones – Fold in ½ cup mini chocolate chips for a dessert-like treat.
- Banana nut scones – Add chopped walnuts or pecans for crunch and a classic banana-bread feel.
- Cinnamon spice – Stir a teaspoon of cinnamon into the dough for cozy, bakery-style warmth.
- Different muffin mix – Swap in blueberry, apple cinnamon, or pumpkin muffin mix for a whole new flavor.
- Healthier swap – Use coconut oil in place of butter, or whole wheat flour, and lighten up the glaze with a sugar substitute.

How to Store, Freeze, and Reheat
Storing: Keep leftover scones in an airtight container at room temperature for 2–3 days. Reheat for a few seconds to bring back that fresh-baked warmth.
Freezing: Wrap scones individually in plastic wrap, then transfer to a freezer-safe bag. They’ll keep for up to 3 months. You can freeze them before or after baking — if freezing unbaked, shape them first and freeze on a tray before bagging.
Reheating: Pop them in the air fryer at 300°F for 3–5 minutes until warmed through, or microwave for 10–15 seconds for a quicker option (though the texture won’t be quite as crisp).
Frequently Asked Questions
Can I use a different muffin mix? Absolutely. Any flavored muffin mix works here — blueberry, apple cinnamon, and pumpkin are all great twists on the original.
Can I make these without sour cream? Yes. Plain yogurt or buttermilk make excellent substitutes and give you a similar moist texture with that gentle tang.
Can I freeze the scones before baking? You can freeze them either way. To freeze before baking, shape the dough, freeze the scones on a tray until solid, then transfer to a freezer bag. To freeze after baking, cool completely before wrapping and storing.
How do I keep my scones from drying out? The biggest culprit is overworking the dough or overbaking. Mix just until combined and check for doneness early to keep them soft and tender.
Can I bake these in a regular oven instead? Yes. Preheat your oven to 375°F and bake for about 12–15 minutes, or until the tops are golden brown.
How can I make these healthier? Swap butter for coconut oil, reduce the sugar, use whole wheat flour, or lighten the glaze with a sugar substitute.

Jo
My grocery doesn’t carry jiffy muffin mix except for corn and sometimes blueberry, so I substituted Martha White Banana Nut muffin mix. Just one punch and halved the rest of the ingredients, only adding Health Toffee Chips for fun. The scones were air fryer baked in a 6” springform pan @325F for 12 minutes. I used a vanilla glaze. While they did not rise, they still made a nice breakfast for the two of us.
