If the Panera asiago cheese bagel is your go-to order, this copycat lets you make it at home in about 20 minutes, with no yeast, no rising and no boiling. Three ingredients go into the dough, and the air fryer gives you that golden, crispy cheese crust everyone fights over.

This has been one of my family’s favorite breakfasts since I first made it. The dough is the same simple Greek yogurt dough I use for my 2-ingredient air fryer bagels, with shredded asiago mixed in and piled on top.
The result is a warm, chewy-soft bagel with a savory, nutty cheese flavor and crisp, browned cheese on top. It isn’t an exact clone of a bakery bagel, but for a weekday morning it gets you remarkably close.

How This Compares to Panera’s Asiago Bagel
Panera’s asiago bagel is a traditional yeasted bagel. It rises, gets boiled and is baked with asiago on top. This version skips all of that and still delivers the part people love most: the cheese.
| Panera-style bakery bagel | This air fryer copycat | |
|---|---|---|
| Dough | Yeast dough, boiled then baked | Self-rising flour + Greek yogurt |
| Time | Several hours | About 20 minutes |
| Texture | Dense and very chewy | Soft, slightly chewy, tender inside |
| Cheese | Asiago baked into a crisp top | Asiago in the dough and crisped on top |
| Equipment | Oven, pot of boiling water | Air fryer (or oven) |
If you want it to taste and look even closer to Panera’s, use the cheese crust tips further down. The egg wash and the mix of shredded and cubed asiago make the biggest difference.
Ingredients for Panera-Style Asiago Bagels

- Self-rising flour: It already contains baking powder and salt, so the bagels rise without yeast. No self-rising flour? Use all-purpose flour plus 1 1/2 teaspoons baking powder and 1/2 teaspoon salt per cup.
- Plain Greek yogurt: Use thick, full-fat or low-fat Greek yogurt, not regular yogurt. It makes the dough soft and adds a slight tang that works well with the cheese.
- Asiago cheese: Part goes into the dough and the rest goes on top. For the most Panera-like crust, use some shredded and some cut into small cubes.
- Optional for a closer copycat: 1 egg beaten with 1 tablespoon water (egg wash), plus a pinch of garlic powder in the dough.
How to Make Asiago Cheese Bagels in the Air Fryer

Step 1: Make the dough. In a large bowl, stir together the self-rising flour, Greek yogurt and 1/2 cup of the asiago with a wooden spoon until a shaggy dough forms.
Step 2: Knead briefly. Turn the dough onto a lightly floured surface and knead for 1 to 2 minutes, just until smooth. Don’t overwork it, or the bagels will be dense.

Step 3: Shape. Cut the dough into 4 equal pieces. Roll each into a 5- to 7-inch rope, then pinch the ends together to form a ring.
Step 4: Brush and top. Place the bagels in the air fryer basket on a parchment round, leaving space between them. Brush with egg wash if using, then press the remaining asiago firmly onto the tops.
Step 5: Air fry. Cook at 350°F for 8 to 10 minutes, until golden and cooked through. For an extra-crispy Panera-style top, finish at 375°F for 1 to 2 minutes.
Step 6: Cool. Let them rest 5 minutes before slicing so the centers set.
Work in batches if needed. If your air fryer runs hot, check at 7 minutes. My guide to toasting a bagel in the air fryer is handy for reheating leftovers the next day.

Tips for a Panera-Style Cheese Crust
- Use egg wash. It browns the dough and acts as glue, so the cheese stays on instead of falling into the basket.
- Mix shredded and cubed asiago. Shreds melt into a lacy layer, and small cubes become the crunchy, browned bits that make Panera’s bagel recognizable.
- Press, don’t sprinkle. Firmly pressing the topping into the dough keeps the air fryer fan from blowing it around.
- Grate your own. Pre-shredded cheese has anti-caking agents that keep it from browning as nicely. A wedge of asiago grated at home melts and crisps better.
- Finish hot. That last 1 to 2 minutes at 375°F is what turns melted cheese into a crisp crust. Watch closely so it doesn’t burn.

Oven Method, Storage and Serving Ideas
No air fryer? Bake on a parchment-lined sheet pan at 375°F for 20 to 25 minutes, until golden brown. Switch to the broiler for the last minute to crisp the cheese, watching closely.
Storing: Keep cooled bagels in an airtight container at room temperature for up to 2 days. The fridge makes them firm up quickly, so it’s better to freeze them in a zip-top bag for up to 2 months.
Reheating: Slice and warm in the air fryer at 350°F for 3 to 4 minutes, or straight from the freezer for 5 to 6 minutes.
Serving: Spread with plain or chive cream cheese, or turn them into a breakfast sandwich with a fried egg, bacon or sausage. They’re also great alongside a bowl of soup for lunch.

Panera Asiago Bagel Recipe FAQs
Does this taste like Panera’s asiago bagel? The flavor is very close, because the savory, nutty asiago crust is what makes Panera’s bagel taste like itself. The texture is softer and less chewy, since this is a quick yogurt dough instead of a boiled yeast dough.
What kind of cheese is on a Panera asiago bagel? Asiago, an Italian cow’s milk cheese with a nutty, slightly sharp flavor. Aged asiago grates and crisps best for this recipe.
Can I use a different cheese? Yes. Parmesan is the closest swap, and cheddar works well too. If cheddar is your favorite, try my air fryer cheddar cheese bagels.
Why didn’t my bagels brown? The air fryer may not have been preheated, or the bagels were too close together. Leave space between them, and brush with egg wash for more color.
Can I make the dough ahead? Yes. Wrap it and refrigerate for up to 24 hours, then shape and air fry just before serving.
Can I make these low carb? This dough uses regular flour. For a low-carb option, my air fryer keto bagels are the better choice.

How long will these last in the refrigerator? Want to make a batch for myself to enjoy for the week.
Thank you!
Laurie
I would make them no longer than a couple of days, they will really harden in the refrigerator. So, keep them at room temperature, for best results.
