  • 1/4 cup bell peppers, diced, any color
  • 2 tbsp fresh cilantro, optional, chopped

  • 1/4 cup salsa, for spreading or dipping

Instructions

  • In a mixing bowl, whisk together 4 large eggs 1/4 cup milk 1/4 teaspoon salt and 1/4 teaspoon black pepper.
  • Heat a non-stick skillet over medium heat and scramble the egg mixture until just set.
  • Stir in the cooked 1/2 cup cooked chorizo, 1/2 cup shredded cheddar, 1/4 cup tomatoes, 1/4 cup bell peppers, and 2 tbsp fresh cilantro. Remove from heat.
  • Lay a t4 medium-sized flour tortillas flat and spread about 1 tbsp of salsa in the center.
  • Spoon 1/4 of the egg mixture onto the tortilla. Fold the sides in, then roll it up tightly into a burrito shape. Repeat for all tortillas.
  • Preheat the air fryer to 375°F (190°C).
  • Place the wraps seam-side down in the air fryer basket in a single layer. Lightly spray with cooking spray.
