This is an excellent recipe for everyone, young (so kid-friendly), old, vegan, vegetarian, KETO, low-carb, and Weight Watchers followers. There is nothing better than eating fresh vegetables in the summer, I love a great dish, and this is so easy to prepare that you can throw it on your Blackstone Griddle or in the Air Fryer for some quick cooking!
The beauty of this recipe is that you can use any fresh vegetables in season. Today I used a mixture of vegetables, but you can do them with all zucchini, mushrooms, cherry tomatoes, or whatever you find at your farmers’ market or in the grocery store!

Blackstone Griddle Vegetable Skewers Ingredients
As I said, this recipe will work with any variety of vegetables or using one; today, I used a combination of vegetables:
- Zucchini
- Summer Squash
- Mushrooms
- Red Onions
- Red Peppers
- Oil
- Seasonings
How To Make Blackstone Griddle Vegetable Skewers
Start by soaking your wooden skewers in water for about 10 minutes. Then turn the Blackstone Griddle on medium-high heat for about 5 minutes to preheat.
While the Blackstone Griddle is preheating, brushing, or rubbing the oil over the vegetables and seasoning them. Thread them through the skewers.
Add the vegetable skewer to the Blackstone Griddle and cook for about 10 to 14 minutes. Frequently flipping during the cooking process. If you need to add more oil, add some more and some seasonings.
What Are The Best Vegetables For the Blackstone Griddle or Grill?
There are so many vegetables that you can grill up this summer. Some of my favorites are bell peppers, zucchini, red onions, summer squash, cherry tomatoes, mushrooms, and eggplant.
The key to a perfect Blackstone Griddle Vegetable Skewers is that they are all about the same size. This way, they all cook up together.
How to Make Kabobs
There are two ways to make them: you can marinate them ahead of time or use seasoning and oil to baste them. Both methods would work the same. You can also use a simple bottle of Italian Dressing to marinate your vegetables.

How Long to Soak Skewers
If you use wooden skewers in either your Blackstone Griddle or Air Fryer, I also soak mine for at least 10 minutes. This will prevent burning.
