Description

Make colorful, flavorful vegetable skewers on your Blackstone griddle. Perfect for quick weeknight dinners, healthy sides, or summer cookouts.

Ingredients 

  • 1 large red bell pepper, cubed
  • 1 large zucchini, sliced
  • 1 large red onion
  • 1 large yellow squash, or summer squash, sliced
  • 10 Bella Mushrooms
  • Oil
  • Seasonings

Instructions

  • Wash all vegetables thoroughly. Cut 1 large zucchini 1 large yellow squash, 1 large red onion and 1 large red bell pepper into even chunks for uniform cooking. Keep 10 Bella Mushrooms whole or halved depending on size.
  • Thread the vegetables onto skewers, alternating colors and types for a visually appealing presentation.
  • Lightly brush the skewers with Oil and sprinkle with your preferred Seasonings, such as salt, pepper, garlic powder, or paprika.
  • Heat your Blackstone griddle to medium-high heat (around 375–400°F).
  • Place the vegetable skewers on the griddle. Cook for 10–12 minutes, turning every few minutes until the vegetables are tender and slightly charred.
  • Remove from the griddle and serve immediately as a side dish, light main, or party appetizer.
