How To Cook Twice Baked Potatoes In Air Fryer

With a few simple ingredients, you can make this fantastic side dish; below is an overview of the instructions.

Baked potatoes on a white plate with insides scooped out.

Step One: Cook The Potatoes

Prepare the Potatoes: Start by baking your potatoes in the air fryer basket, poke holes with a fork or sharp knife, and set the cooking time for 30-35 minutes, at 400 degrees F, or until tender.  Cook times will vary based on the size of the potato. This is the first “bake” in the twice-baked potato process.

Hollow and Mash: Remove the cooked potatoes from the air fryer. Cut the baked potatoes half lengthwise, carefully scoop out the inside of the potatoes, and place the insides of the potatoes into a large bowl. Be sure to leave a thin layer of potato on the skin. Mash the scooped-out potato in a bowl with a potato masher or use a hand mixer. Mix it with your desired fillings, such as butter, cheese, sour cream, chives, bacon bits, or other ingredients.

Step Two: Remove The Insides Of The Potatoes

Stuff the Potatoes: Fill the potato shells with the mashed potato mixture, creating a slight mound on top.

Preheat the Air Fryer: Preheat your air fryer to 375 degrees F (190°C) for 4-5 minutes.

Step Three: Prepare The Potato Filling

Air Fry: Place the stuffed potatoes in the air fryer basket, leaving space between them for air circulation in a single layer.  Depending on the size of your air fryer, you may need to cut these stuffed potatoes in batches.

Second Bake: Air fry the potatoes for about 10-15 minutes or until they are heated through and the tops are crispy and golden brown. You can check the doneness by inserting a toothpick or fork into the filling; it should come out hot. If you want to add cheese, add the remaining cheese on top, and then air fry for another 2-3 minutes.

Serve: Remove the twice-baked potatoes from the air fryer, let them cool for a few minutes, and then serve them with your favorite toppings or garnishes.

Air frying twice-baked potatoes saves time and produces a wonderfully crispy texture that many enjoy. Just be sure to adjust the cooking time and temperature based on your specific air fryer model and the size of your potatoes for the best results.
