I also love this recipe because you do little time. It needs such little attention from you that it just cooks by itself.
The first tip I will give you is to rub the potato with olive oil and season it with salt. Getting the potato skin crisp will give it all the more flavor. This is the secret not only to a fantastic Twice Baked Potato But a Great Air Fryer Baked Potato.

I usually use the microwave or the air fryer if I have time. They make an excellent base for twice-baked potatoes, and the crispy potato skins can not be beaten!
They make for a quick side dish, and this is one of my favorite potatoes recipe! This is one of the best potato recipes you can make and is fancy enough for a fancy dinner or a simple side dish you can serve to your family! I love serving these during the holidays, for a perfect addition to my Thanksgiving and Christmas Meals, and they are so much better than a regular baked potato.

Step One: Cook The Potatoes
Start by either air frying, baking, or microwaving the potatoes. Wash and dry your potatoes with a paper towel, and season with salt and black pepper. Once the potatoes are fully cooked, let them cool slightly. If you want to cook them in the air fryer, set the temperature to 400 degrees F, and set the cooking time for 30-35 minutes; remove when fork tender.
Note; The Cook Times will vary based on the potato’s size and your size of your air fryer.
Step Two: Remove The Insides Of The Potatoes
Let the potatoes cool for a few minutes. Then place them onto a large cutting board. Use a sharp knife and cut the potato halves, then use a large spoon and scoop out the insides, leaving just enough of the potato shells so it doesn’t fall apart.
Pro Tip: The key is to leave enough potato meat to keep the potato skin firm so it does not fall apart when you stuff it.
Step Three: Prepare The Potato Filling
Add all the potato contents into a large mixing bowl, and add the milk, sour cream, butter, bacon bits, and shredded cheese. Mix well. Either use a fork, hand mixer, or a potato masher. Do not over-mash it. Otherwise, it will be more like creamy mashed potatoes in your loaded potatoes; you want a few lumps!
Stuff the potato with the mashed potato filling.
Step Four: Second Time Cooking
Preheat the air fryer basket for 5 minutes at 400 degrees F, air fryer setting. Set in the air fryer basket and set the cooking time for 5 to 8 minutes. Remove when you notice melty cheese1
Pro Tip: I left the room around the potatoes, so they could perfectly cook up. The potato skins will get crispy from the hot air that floats around the potato skins!
How to Reheat Twice Baked Potatoes in Air Fryer
If you have previously made air fryer (or even oven) twice-baked potatoes, you would like to reheat them; I love using extra potatoes for this recipe!
Preheat your air fryer to 400 degrees F for 5 minutes. Then add your potatoes and heat until warmed through.
How to Cook Frozen Twice-Baked Potatoes in Air Fryer
If you find Frozen Twice Baked Potatoes, I follow the same instructions for this recipe, preheat your air fryer to 400 degrees F for 5 minutes, and then air fry for about 12-15 minutes.
Check the air fryer frequently because the cheese will go from melted to burning in a couple of minutes.
How To Store
Let any leftovers cool to room temperature, then place them in an airtight container. The ill last in the refrigerator for 2-3 days.
Make Ahead For A Perfect Side Dish
Absolutely, just like the oven kind, prepared through the stuffing part. And then, place them on a baking tray, pop the tray into the freezer and let them freeze.
Once they are frozen, remove them and place them in a freezer bag., or freezer-safe container.
Cooking the Twice Baked Potatoes in the Oven
You can easily make this great recipe in a regular oven or even an air fryer oven.
Preheat your oven to 350 degrees F, season your potatoes with salt and black pepper, and then place them on a baking sheet and bake for 15 to 20 minutes, until golden brown.
