How To Make Air Fryer Russian Tea Cakes

Mixing sugar cookie dough with flour and chopped pecans in a large bowl.

Step 1: Place the sugar cookie dough in a large bowl, then fold in the flour and chopped pecans until evenly combined.

Shaped Russian Tea Cake cookie dough placed on a greased air fryer tray, baking at 320°F.

Step 2: Scoop about a tablespoon of dough and shape it into a ball, then place it on a greased air fryer tray or a parchment-lined basket. Air fry at 320°F for 4–6 minutes, removing the cookies when the edges turn lightly golden.

Step 3: Place powdered sugar in a bowl. Once the cookies finish cooking, let them cool slightly, then roll them in the powdered sugar until fully coated.

Air Fryer Russian Tea Cakes Recipe Tips

  • Use room-temperature dough: Makes it easier to mix and shape the cookies.
  • Uniform cookie size: Use a tablespoon or small cookie scoop for even baking.
  • Leave space between cookies: Allows them to bake evenly without sticking together.
  • Watch cooking time: Air fryer models vary; remove cookies when edges are lightly golden.
  • Cool slightly before coating: Prevents powdered sugar from melting into the cookies.
  • Chop nuts evenly: Ensures each cookie has a consistent texture and flavor.
  • Store properly: Keep cookies in an airtight container to maintain softness and flavor.

Storing, Freezing and Reheating Instructions

  • Storing: Store cooled Russian Tea Cakes in an airtight container at room temperature for up to 5 days. This keeps them tender and maintains their powdered sugar coating.
  • Freezing: Place baked cookies in a freezer-safe container or bag for up to 2 months. Thaw at room temperature before serving.
  • Reheating: Warm cookies in the air fryer at 300°F for 1–2 minutes if desired, or enjoy them straight from storage. This refreshes their slightly crisp edges while keeping the center tender.
