What Are Russian Tea Cakes?

Russian tea cakes, or povitica, are a traditional Christmas pastry in Ukraine and other Slavic countries. They are simple to make and require just a few ingredients, making them a perfect option for last-minute baking.

The dough is made from flour, sugar, eggs, butter, and vanilla extract, and is then shaped into small balls and rolled in confectioners’ sugar. Russian tea cakes are delicious when fresh out of the oven, but they can also be stored in an airtight container for several days.

How to tell when Tea Cakes are Done?

I can always tell when these cookies are about ready to be done, as the edges will start to turn golden brown. Remember the cookies will harden as they cool, so as soon as you see a light browning around the edges, remove the cookies!

Make-Ahead

Storing: If you have any cookies left over, let them cool to room temperature, they will last for about 2 to 3 days. For any l longer storage, place them into an airtight container and leave them in the refrigerator, where they will last for about a week.

Freezing: These are a great make-ahead cookie. If you want to make a double or even triple batch, you can freeze one batch. Place them onto a parchment-lined baking sheet. Place the baking sheet into the freezer, and freeze until the cookies are frozen solid. Remove the frozen cookies and place them into a freezer-safe container or freezer bag. They will last for about 1 to 2 months.

Thawing: When you are ready to eat your cookies, place the frozen cookies into the refrigerator overnight.
