Crispy bacon wrapped into little baskets with a perfectly cooked egg in the center, all done in about 10 minutes. You pop them in the air fryer, walk away to get ready for your day, and come back to a hot, protein packed breakfast waiting for you. They are keto friendly, low carb, and the whole family loves them.

If you have been following along, you already know I love making breakfast in the air fryer. Eggs come out so well, and I love that I can set them and forget them. These bacon and egg cups are right at home next to my Air Fryer Breakfast Casserole and my Air Fryer Soft Boiled Eggs, which is another one I reach for on busy mornings.

Why You Will Love This Recipe

There is so much to love about these little cups. They come together fast, with bacon and eggs cooked together in one pan in about 10 minutes. They are naturally keto friendly and low carb, with around 1 gram of carbs and 9 grams of protein per cup. The air fryer does all the work, so there is no standing over the stove. They are also wonderful for meal prep, since you can make a batch and reheat them through the week. And they are endlessly customizable, which I will get into below. Best of all, my kids ask for these before school, so they have earned a permanent spot in our breakfast rotation.

Ingredients You Will Need

  • Bacon: Regular thin cut bacon works best because it wraps easily and crisps up quickly. Thick cut bacon takes longer to cook than the egg, so save it for another recipe.
  • Eggs: Large eggs are the standard here, one egg per cup. Use the freshest eggs you can find for the best flavor and texture.
  • Salt: Just a pinch in each cup to season the egg.
  • Black Pepper: Adds a little warmth and balances the richness of the bacon and yolk.
  • Shredded Cheese: This one is optional, but a sprinkle of cheddar, mozzarella, or gouda turns these into something extra special.

How to Make Air Fryer Bacon and Egg Cups

Step 1: Start by lining the inside of each cup in a muffin tin with a slice of bacon, wrapping it around to form a little basket. Make sure your muffin tin fits inside your air fryer basket, since that is the one thing you really need to get right.

Step 2: Place the muffin tin in the air fryer and cook at 400 degrees F for 5 minutes. This gives the bacon a head start so it finishes nice and crispy.

Step 3: After 5 minutes, carefully crack one egg into the center of each bacon basket. Season with a little salt and pepper. If you are adding cheese, sprinkle it on now, or wait until the last minute or two for a melty finish.

Step 4: Return the tin to the air fryer and cook at 400 degrees F for another 5 minutes, or until the eggs are set to your liking. Keep an eye on the last couple of minutes, because every air fryer runs a little differently and eggs cook fast.

Step 5: Carefully remove the cups, since they will be very hot, then plate, serve, and enjoy.

Tips for the Best Bacon and Egg Cups

  • Use a muffin tin that fits your air fryer basket. This really is the most important step. A small metal or silicone tin made for air fryers works perfectly.
  • If you want extra crispy bacon, cook the bacon a few minutes longer before adding the egg so that both finish at the same time.
  • Watch the last few minutes closely. Eggs go from runny to firm quickly, so check around the 8 minute mark if you like a softer yolk.
  • Silicone liners are optional and make cleanup easy, but the cooked cups can be a little tricky to pop out, so let them cool slightly first.

Variations and Substitutions

One of my favorite things about this recipe is how easy it is to make it your own. For the meat, you can swap in Canadian bacon, ham slices, or turkey bacon. For cheese, try shredded mozzarella, cheddar, gouda, or pepper jack. For seasonings, Everything But the Bagel seasoning is amazing on top, or you can use Italian seasoning, garlic powder, or onion powder. And to make a little mini quiche, whisk the eggs with a splash of milk or cream before pouring them into the bacon baskets, then add diced bell peppers, onion, spinach, or tomatoes for a veggie loaded bite.

How to Store and Reheat

Let the egg cups cool to room temperature, then store them in an airtight container in the refrigerator for up to 3 days. To reheat, warm them in the air fryer for a couple of minutes or microwave until heated through. These do not freeze especially well, since the texture of the cooked egg suffers, so I recommend making a fresh batch when you want them.
