Description

Air Fryer Bacon and Egg Cups are a quick, keto friendly breakfast made with crispy bacon baskets and a perfectly set egg in the center. Ready in about 10 minutes, they are perfect for busy mornings or meal prep.

Ingredients 

  • 4 slices bacon, thin cut
  • 4 large eggs
  • 1/2 teaspoon salt, to taste
  • 1/2 teaspoon black pepper, to taste
  • 1/4 cup shredded cheese, optional

Instructions

  • Line the inside of each muffin cup with a slice of bacon, wrapping it into a ring to form a basket.
  • Place the muffin tin in the air fryer and cook at 400 degrees F for 5 minutes.
  • Carefully crack one egg into the center of each bacon basket. Season with salt and pepper, and add cheese now if using.
  • Return to the air fryer and cook at 400 degrees F for another 5 minutes, or until the eggs are set to your liking.
  • Carefully remove the cups, since they will be hot, then plate and serve.

Equipment

  • Air Fryer, Air Fryer Basket or Air Fryer Oven
  • Muffin tin or silicone cups sized to fit your air fryer basket

Notes

Use a muffin tin that fits inside your air fryer basket.
For crispier bacon, cook it a few extra minutes before adding the egg.
Watch the last few minutes, since eggs cook quickly and every air fryer is different.
Store in an airtight container in the fridge for up to 3 days. These do not freeze well.
