  • All-Purpose Flour
  • Baking Powder
  • Granulated Sugar
  • Salt
  • Buttermilk
  • Eggs
  • Pure Vanilla Extract
  • Butter
  • Fresh or Frozen Blueberries

How To Make Air Fryer Blueberry Pancake Muffins Poppers

Pancake Batter in Bowl

Start by adding the flour, baking powder, sugar, salt to a mixing bowl and mix well. Then mix in the buttermilk, eggs, vanilla extract, and melted butter. Mix well.

Pancake Batter in Cupcake Liners

Spray your muffin tins with non-stick cooking spray or olive oil spray. Pour your muffin mixture into the prepared muffin tins. Add a few blueberries on top.

Blueberry Pancakes

Set the temperature to 320 degrees F for 8 to 10 minutes, air fryer setting.

Check them when they come out, mine were fully cooked, so I removed the muffin tins and placed them on the counter to cool slightly. If yours are not cooked (remember every air fryer is different), add a few more minutes.

HOW DO I STORE MY PANCAKE MUFFINS?

These are so good, and you can make a batch ahead of time and then reheat them. Place them into an airtight container and then place them into the refrigerator.

To reheat them, place them into an airtight container, and then reheat them into the microwave or air fryer until warm.

HOW DO I FREEZE PANCAKE MUFFINS?

These are easy to freeze. If you want to prepare a great back-to-school breakfast, this is one of my favorites.

To freeze, let them cool to room temperature, then place them into a freezer bag. They will last 1 to 2 months. Thaw in the refrigerator or on the counter, then reheat in the microwave or air fryer.

  • 2 1/2 cups buttermilk
  • 2 large eggs, 1
  • 1 tablespoon vanilla extract
  • 4 tablespoons melted butter
  • 1/2 cup fresh blueberries

Instructions

  • Start by adding the flour, baking powder, sugar, and salt to a mixing bowl and mix well.
  • Then mix in eh buttermilk, eggs, vanilla extract, and melted butter.
  • Mix well.
