If your zucchini is piling up and you want a full-size loaf, this batter works in a conventional oven too.

Preheat to 350°F. Pour the batter into a greased 9×5-inch loaf pan and bake for 55 to 65 minutes, until a toothpick inserted in the center comes out clean. If the top is browning faster than the center is setting, tent it loosely with foil for the last 15 minutes.

Cool in the pan for 10 minutes, then transfer to a wire rack.

What Pan Should I Use?

Mini loaf pans are the best choice for the air fryer. A shallower pan means heat reaches the center before the top over-browns, and most mini pans fit two at a time in a standard basket.

Check that your pan fits before you fill it. Set the empty pan in the basket first and confirm the drawer closes with an inch or two of clearance on all sides for air to circulate. Discovering it doesn’t fit after the batter is in is a genuinely bad moment.

A 6-inch round cake pan or a small springform pan also works well if that’s what you have.

Air Fryer Notes by Model

Air fryers vary more than people expect, so treat the times below as a starting point and rely on the toothpick test.

Basket-style air fryers (Cosori, Instant Vortex, Philips): 320°F for 25 to 30 minutes. These run hot and circulate air aggressively — start checking at 22 minutes.

Ninja Foodi: Use the Bake setting at 320°F for 30 to 35 minutes with the attached lid closed.

Oven-style and toaster-oven air fryers: These are gentler. 320°F for 30 to 35 minutes, and you can usually fit a slightly larger pan.

Dual-basket models: Bake one mini loaf per basket and use the sync setting so they finish together.

If your air fryer runs hot, or the top is browning well before the center sets, lay a small piece of foil loosely over the pan for the back half of the cooking time.
