To make homemade Bisquick for this recipe, or any recipe that needs Bisquick here is how to make it with some pantry items you have on hand,

  • 6 cup all-purpose flour
  • 3 tablespoons baking powder
  • 1 tablespoon salt
  • 1 cup vegetable shortening

To make it, add all of the ingredients to a food processor and blend until smooth.

What is the texture of this pie?

This vegetable pie is a cross between a cake and a quiche, in my personal opinion. It is not like a traditional pie with a crust. This is a crustless pie made with a baking mix.

If it were a recipe you are crisping up like fried zucchini, you wouldn’t want to use frozen. But this recipe is more than acceptable.

  • Evenly cut vegetables are key. You can use a mandoline for speeding up cutting your veggies.
  • Make sure to mix up the wet ingredients until well mixed. Then fold in the zucchini and onions. That way, you ensure all your egg mixture gets mixed well.
  • Cook until the zucchini pie is set up in the center. You will know by taking a toothpick and testing the center of the dish. If it comes out with wet batter, cook it longer.
  • You can bake this in the oven, at 350 degrees.

Fridge – You will need to store any leftovers you may have in the refrigerator. Store your zucchini dish covered tightly. It will last 3-4 days in the fridge.

Freezer – Maybe you are looking to freeze some of your pie. Go right ahead and store in a freezer-friendly container for 3-4 months. When you want to eat, thaw in the fridge overnight. Or you can cover tightly in aluminum foil and heat in the oven until warmed through.

  • 1 teaspoon minced garlic
  • 1/4 cup diced onions
  • 1 teaspoon dried parsley
  • 3 cups diced zucchini
  • 1 cup Bisquick
  • 3 large eggs
  • 1/2 teaspoon black pepper
  • 1/2 cup vegetable oil
  • 1 cup Parmesan Cheese, grated
